Healthy Snickerdoodle Pancakes, the breakfast that tastes like dessert! Low in sugar, full of flavor and super easy to make – perfect for a weekend brunch! Last week when it snowed (for what feels like the billionth time), I was stuck working from home for the day.. and what else can you do besides cook when you’re stuck inside? Anyways.. It was cold, and snowy, and Ty and I were both up early regardless of the ‘snow day’, so I figured I’d make a yummy breakfast before I started working for the day (We’re both lucky enough to be able to work from home in bad weather!). I knew I wanted something warm + comforting, but was torn on what to make. As I was making my coffee, I had an idea.

Every single morning, my first cup of coffee gets 1 scoop, and then I take a to go cup with another scoop in that to work. (Always in my Healthy Human – love that thing!!) I have a pretty basic pancake recipe that I usually follow, but I decided I’d jazz it up to make it taste like one of my favorite cookies – Snickerdoodles! Snickerdoodles always remind me of Christmas and Winter, so it was perfect for breakfast on a cold, snowy morning! You can’t even tell that there are collagen peptides in here. They have no flavor, and completely dissolve into the batter – leaving you with utterly delicious, fluffy pancakes that you can feel great about indulging in!
