A simple recipe for a delicious, healthy, fall dessert! Grab a blanket + get cozy with these soft, cake-like Healthy Pumpkin Chocolate Chip Cookies!
Aaaaaand we’re back at it. You may have noticed that over the past few weeks we’ve only been posting once a week. Sorry if you missed all the delicious-ness that we normally have happening on Tuesdays & Thursdays. We tried to hold you over with the Chocolate Coconut Donuts and Paleo Apple Crisp, but no fear – this week we’re back to two awesome posts a week! We’ve finally moved in to our new apartment, and the craziness has settled. Yay!
As if that wasn’t exciting enough… Thursday is official fall. Yes, it’s still a little hot out and the leaves haven’t all changed just yet – but I couldn’t wait any longer to share these cookies with you. Plus Starbucks already has their Pumpkin Spice Latte back.. so if they’ve brought pumpkin back, then I can too, except in a way better + better for you Healthy Pumpkin Chocolate Chip Cookie form.
I’ve already made them twice this year and they get better and better every time. Fun story – these Pumpkin Chocolate Chip Cookies were the first recipe I EVER posted on the blog three years ago. Crazy…I know. After setting up a free Wordpress account (back then we were Clean Eating & Focused Training. Don’t ask me why we chose that name), and making these cookies I was ready to be a blogger.
I posted the cookie recipe with a pumpkin granola recipe (I’m re-making that too).. shared it with a few friends and my family, and the readers just poured in. Kidding. Like two people visited the blog and I’d bet that it was my mom and dad. The pictures of these cookies that used to be up here were taken in a dark room with an iPhone 4 and then edited with an Instagram filter… so needless to say, I’ve stepped my game up since then. Regardless… the cookies have been + always will be one of my favorite recipes.
These cookies are very soft and cake-like. They’re best if eaten right out of the oven when they’re still warm + the chocolate chips are still melty. They freeze + refrigerate well, and you can swap in different add ins to make them just the way you like. I’ve done craisins, almonds, chia + flax seeds – it’s all been delicious!
- 2 tbsp melted coconut oil
- ¼ c applesauce
- ¼ c honey
- 1 egg
- ¾ cup pumpkin puree
- ½ tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp nutmeg
- ¼ tsp ginger
- ¼ tsp cloves
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 c oat flour
- 1 c whole wheat pastry flour
- ½ c chocolate chips
- Melt the coconut oil.
- Add in eggs, pumpkin puree, honey and applesauce.
- Mix in dry ingredients.
- Drop spoonfuls of dough onto lined cookie sheets.
- Bake at 400 for 5-10 minutes until the cookies are a light brown on the bottom
