Summer grilling season is FINALLY here. I feel like I’ve waited forever to say this!! Maybe you’re somewhere where its warm year round, but if you’re from the East Coast – you know what I mean when I say it hasn’t really felt like summer until this past weekend. The temps rose to the 90’s and it was a beautiful thing my friends. I’ve been patiently waiting to be able to sit by the pool since basically we toured our apartment building back in September.. So when I finished my work early on Sunday, I all but ran down to the pool to catch some rays (safely, obviously. I really like this all natural sunscreen if you’re looking for one).
As much as I love summer and the heat, there is really nothing more that I dislike than gross picnic food. You know what I’m talking about. Warm potato salad that has been sitting out for hours. Random gross dips that have flies swarming around them. Hot dogs and hamburgers that were definitely bought in bulk at some random mass retailer that you’re probably wondering what the heck is in them. I know I can’t be wrong here. You can taste a good burger, and I’d say that 99% of the time, people don’t serve good burgers at a picnic, right?
Maybe I’m just a food snob (ok, I’m definitely a food snob). But quite frankly, I’m SO over gross picnic food. That’s why I had the idea to partner up with my friends to bring you some of the best summer picnic eats, including this Honey Thyme Balsamic Grilled Chicken!
The best part about this recipe is that it’s SO darn simple. It always amazes me how you only need a few simple things to make something delicious. You probably already have all the ingredients you need to make this Honey Thyme Balsamic Grilled Chicken in your cabinet already. Honey, balsamic vinegar, olive oil, thyme..it’s pretty much as simple as it gets!
Here’s how you can make it:
- 4 large boneless, skinless chicken breasts
- ½ cup olive oil
- ⅓ cup balsamic vinegar
- 1.5 tablespoons honey
- 1 tablespoon fresh thyme leaves
- Pinch of pepper.
- In a food processor or NutriBullet, blend olive oil, balsamic, honey and fresh thyme until creamy.
- Pour marinade into a ziploc bag or container
- Add chicken and allow it to marinade for at least 30 minutes.
- Heat grill on high and cook on each side for 5-10 minutes or until chicken is cooked thoroughly.
