This Healthy Peach Cucumber Salsa Recipe is the perfect refreshing summer snack. Low calorie, Whole 30 friendly, paleo and gluten free – it’s so delicious!
Can I just say that I’m straight up OBSESSED with making salsa lately? I would like to tell you that I’ve been feeling super inspired and creative because of all the wonderful fresh summer produce, but really – it’s just because I’m cheap.
Yep. You read that right.
I recently got hooked on a fresh salsa that my local Whole Foods makes. It’s made with fruit, has a spicy kick, and it’s really so delicious that you can eat it with a spoon. This stuff is so good that I would go out of my way on my way home from work just to stop and get it (which if you know me, you know I HATE going to grocery stores, especially after working all day) Granted, I live approximately 25 feet from my Whole Foods, but at $6 for a tiny little container of it, and me eating pretty much a container a night, it wasn’t exactly a cheap habit to get into.
After about two weeks of my salsa eating endeavors, I decided that it really had to stop. As much as I would love to not care about spending $$ on salsa every day, we do have a budget that we stick to.. and this was a ‘nice to have’ not a ‘must have’. I wasn’t ready to give up on the deliciousness, so I took a look at the ingredients again, and realized. I CAN TOTALLY MAKE THIS. It only had 7 ingredients, it was all super simple stuff, and with the exception of one thing.. I had everything I needed to make it in the kitchen already!
I will admit that was my first time ever making salsa! I’d always just looked for/purchased the clean ones from the store, but once I realized that I was able to make my own.. I was on a mission.
Tomatoes on their way out? Chop them up and put them in a salsa. Too much pineapple or watermelon for 2 people to eat? Throw them in the salsa. Abundance of herbs? You guessed it: put them in salsa. I was like Oprah with cars with our produce. You get to go in salsa and you get to go in salsa.. Know what I mean? That’s a little dramatic, but you get what I’m saying.
Anyways, sure enough.. once the peaches on the counter started to get soft… I immediately thought: Wouldn’t these be AMAZING in salsa? The sweet peaches combined with spicy onion.. YUM! When I looked in the fridge the only other things we really had were cucumbers (we had bought them in bulk at costco) and some basil… Hence resulting in this utterly delicious summer staple that I know you’re going to love!
- ¾ cup finely chopped cucumber
- ½ cup chopped peaches
- ¼ cup finely chopped onion
- Juice of 2 limes
- ½ tablespoon olive oil
- ½ teaspoon pepper
- ½ teaspoon sea salt
- ½ teaspoon red pepper flakes
- 2 tablespoons fresh chopped basil
- In a large bowl, mix all ingredients until thoroughly combined.
- Enjoy with chips, or serve over grilled chicken for a fun summer twist!

I know Peach, Basil + Cucumber might seem like a weird combo, but I promise you it’s not. The flavors go together so well. While I polished this off with some tortilla chips in no time, I’m looking forward to putting it over some grilled chicken! I think it will be a yummy, refreshing summer dinner option!
