The Tuesday after a long weekend is always the hardest… Ya know? I took Friday off to spend the day at the beach and let me just say… it was AMAZING. There is really nothing better than sitting in the sun and reading a good book. (I just finished Life’s Golden Ticket…it was so good! ) When I got home, I was craving something sweet (Nothing new here.. I’m practically always craving sweets!). I had some time before I had to pick up Tyler from the train – so I figured I’d bake something!
If you follow us on Instagram you know that a few weeks ago Larabar sent us their new LÄRA Nut Butter! I was SO excited. I absolutely love LÄRA bars, and everything their company stands for. Their bars are made with simple, real food ingredients. They’re one of the snacks that I always have on hand.. in my purse, car, desk… etc.. you get the picture! When they told me about the nut butters I couldn’t wait to try them.
The nut butter currently comes in 2 flavors – Chocolate Coconut and Banana Nut. However, in my opinion – they could’ve just named it heaven in a jar and left it at that. The Chocolate Coconut one is ahhhh-mazing. It’s nutty, creamy, slightly sweet… you have to try it. The Banana Nut one tastes like they bottled up a jar of my favorite banana cake. I can’t wait to make a loaf and slather it allll over it. The nut butters are only available exclusively at Costco in the NorthEast + Bay Area. So if you don’t have a membership.. ya better get one! You all know how much I love Costco.. I write about it all the time. It’s at the top of my list for tips for eating healthy on a budget. They have so many better-for-you items at a tremendously lower cost than what you would find in the grocery store.
Now.. to the good stuff. The donuts. I like to think of myself as some what of a healthy donut aficionado. They’re my favorite thing to make.. and not to pat myself on the back.. but they always come out so flippin’ good! My favorite ones are definitely these Strawberry Shortcake Donuts .. but the Double Chocolate ones are pretty delicious too.
I love the combination of chocolate and coconut. There’s something about the sweetness of the chocolate, and the smooth, nutty-ness of the coconut that pairs so well together. I knew the nut butter would make these donuts perfectly moist, and work well as a ‘frosting’.
Now I’ve gotta tell ya – I’ve made a lot of healthier donuts. These… without a doubt my favorite. You gotta try em!
- 4 flax eggs - See below for instructions
- ½ c almond flour
- 1 c whole wheat pastry flour
- 2 tsp baking powder
- 2 tsp baking soda
- 6 tbsp honey
- 4 tbsp cocoa
- ¼ shredded unsweetened coconut (plus extra for sprinkling on top of donuts)
- 1¼ c almond milk
- ¼ c Chocolate Coconut LARA Nut Butter
- Make flax eggs and allow them to sit for 5 minutes. For one egg, combine 1 tbsp flax seed meal with 2.5 tbsp water.
- Mix all ingredients in a large bowl. The mix should be somewhat thick, but if it is clumpy or very difficult to stir, add in a little more milk or water.
- Spray your donut pan with coconut oil or olive oil.
- Spoon batter into a ziploc bag, cut the corner, and ‘pipe’ donuts into your pan - filling all the way.
- Bake at 350 for 15 minutes.
