6 Ingredient Healthy Apple Cinnamon Muffins are easy to make and taste great! Perfect for breakfasts or snacks on the go.
Is it me, or are muffins the best breakfast food out there? There’s just something about them that are so comforting and yummy! They’re also so easy to make, and perfect for breakfasts on the go. Typically we make muffins, pancakes, or waffles on Sunday while we meal prep. We then individually wrap them and put them in the freezer or fridge so they are easy to grab and go in the mornings.
The other day I was at the grocery store and spotted Kodiak Cakes. I’ve been following them for a while on Instagram, and had been meaning to try them. We typically don’t buy boxed pancake/waffle mixes because most of them have ingredients that we don’t want to eat- but these have basically the same ingredients that we would put in our own mixes! I’m all about simplicity AND they were on sale – so I obviously got a box!
Over the past few weeks I have made pancakes and waffles with them, and they are great! On their social media channels, they are always posting fun recipes – so I decided to test out the mixes beyond their pancake and waffle capability. The result was the easiest and quite possibly the tastiest Apple Cinnamon Muffins I’ve ever made.
The muffins only have 6 ingredients in them, and they’re probably things you already have at your house!
- 2½ c Kodiak Cakes Mix
- 2 c milk
- ¼ c honey
- 1 c chopped apples
- ½ c apple sauce
- 1 tsp baking powder
- Spices: I put 1 tsp of cinnamon + ½ tsp: ginger, nutmeg & cloves, but you could add in whatever spices you like to put in baked goods.
- Spray a muffin pan with nonstick spray.
- Fill each cup ¾ of the way with batter.
- Bake at 350 for 12-15 minutes.
