It’s really winter guys. I was trying so hard to pretend it wasn’t going to happen.. but it totally did. Cue the tears… (and hats, scarves and jackets). Even though I’m sitting here freezing, I am pretty excited that Christmas is only about a week away! The cold weather stinks, but the holiday cheer is just the best, right? Regardless of if you celebrate the holidays or not, it seems like once Thanksgiving rolls around everyone is just a little happier + kinder. It’s sort of infectious, and I really love it.
With all the holiday cheer also comes allll the parties, and sometimes stress. I’m really trying hard this year to not get stressed with the holidays, but it can be inevitable. From trying to get all the gifts for everyone to traveling + traffic…and then all the baking… it can be a lot. Despite all the craziness, holiday baking is my favorite thing to do. This weekend I got to spend the day with my grandma + cousin making all of her traditional Christmas cookies. My gram is a fantastic baker + just loves Christmas. There are a number of things she does each year to help make so many awesome memories, but one thing that always stands out to me is her baking. As a kid I could hardly wait for her to do all of her Christmas cookie baking. She makes so many different kinds…. candy cane cookies, cut out cookies, chocolate rolo cookies, oatmeal lace cookies, Italian Pizelles, thumbprints…. the list goes on and on!
On top of tasting delicious, the cookies are always beautiful. She decorates them perfectly… They seriously look like they could be in a magazine! However, I know that we all aren’t like my gram… for some of you, you may be cringing at the thought of having to bake all of those cookies! If you love baking and care about quality ingredients but don’t have time to make every single item on your holiday menu from scratch, I’ve got the solution for you!
Remember a few weeks back when I shared these Peanut Butter Cookie Brownies that were made with Immaculate Baking‘s Peanut Butter Cookie Dough? Well I’m back with another super easy/drool worth recipe for you – Cinnamon Roll Monkey Bread Muffins!
Now in addition to loving cookies… who doesn’t love a cinnamon roll? As a kid, they were one of my favorite breakfasts. My mom would let us have them sometimes on Sunday mornings or on holiday mornings like Christmas or Easter. The best part would be drizzling all that super sweet icing on top!
I truthfully can’t tell you the last time I’ve eaten a cinnamon roll.. Other than my Cinnamon Bun Oatmeal which I make every once in a while, I probably haven’t had a cinnamon roll in at least 5 years. Let’s be real. Most of the products out there on the market are FAR from having healthy ingredients, and who has time to come up with a better-for- you pastry dough recipe, wait for it to rise, bake it and pray that it turns out well? Not me.
I’ll be honest – I LOVE to cook, but when it comes to dough, and needing things to rise… it’s just not my thing. Pastries are so hard to make… and let’s not even get started on breads. When I noticed Immaculate Baking‘s better-for-you Organic Cinnamon Rolls on the shelves at Whole Foods, I was like oh heck yes we need these. They were made with wheat flour instead of traditional white flour, and had about half the sugar in them that other cinnamon roll brands do. (Which now that I’ve gotten older, I’m much more sensitive to + probably wouldn’t enjoy the cup full of icing I used to put on top of my cinnamon rolls.)
I’ve tried the Cinnamon Rolls per the direction on the package and they came out fabulous, but I knew I could probably do something a little more fun with these… like make monkey bread! If you haven’t had monkey bread, it’s pretty darn delicious. It’s basically a pull apart bread that’s gooey and buttery. My gram makes hers with caramel in between the dough pieces + it’s pretty outstanding.
I knew the Cinnamon Roll dough would be perfect to chop up + turn in to monkey bread muffins! So with a few snips, a little sugar + spice, and 25 minutes in the oven.. I had the ultimate sweet breakfast treat done! (And then I jazzed up the icing to make it pumpkin flavored.. because pumpkin everything = better!) We all deserve to indulge every once in a while, and this is the best way to do it (in my opinion!)
Cinnamon Roll Monkey Bread Muffins
- 1 package of Immaculate Baking Cinnamon Rolls
- ¼ c coconut sugar
- ½ tbsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- 1 tbsp pumpkin puree
- ¼ c Immaculate baking icing
- Preheat oven to 350
- Unroll the cinnamon rolls and chop into 1 inch pieces
- In a ziploc bag or container combine coconut sugar, cinnamon, nutmeg + ginger
- Toss the cinnamon roll pieces + sugar mixture around until the pieces are evenly coated
- Grease a muffin tin + pile the cinnamon roll pieces on top of one another until 3/4 the way full.
- Bake at 350 for 15-17 minutes until golden brown.
- While muffins are baking add pumpkin puree to the icing and whisk together.
- Top muffins with icing + enjoy
These are so fun to make on a lazy Sunday morning or would be perfect to serve as a breakfast if you have friends or family over on the weekends. They’re definitely rich + delicious, and I know your guests would love them. Plus… you’ll love that they’re so easy to make. You get to spend more time with your family/friends + they get to eat delicious Cinnamon Roll Monkey Bread Muffins for breakfast…what more could you ask for?? (P.S.
