Summer means one thing in my mind… ICE CREAM! I mean sure.. summer means longer days, heading to the beach, relaxing by the pool.. but that all comes after ice cream. Ice cream is probably my most favorite thing about summer time, and I know you guys are with me when I say there’s really nothing better than going out on a hot summer day (or night) and getting a giant cone, with allll the sprinkles. (duh)
When Tyler and I were first dating, I think we must have gone out for ice cream almost every night during the summer. It became our thing. We’d spend the day working or at the beach, then if we weren’t going out with friends, it was off to get ice cream and watch Netflix. Side note: This was the summer before college, so we didn’t have ‘real’ jobs (we worked full-time, just not in corporate America), and I also had never stepped foot in a gym. Oh how times have changed!
With the weather being soooo hot lately, I’ve naturally been craving ice cream. While our days of going out to ice cream every night have passed (who can afford $7 ice cream cones when you have rent to pay, let alone the fact that we get home and are EXHAUSTED most nights), we still go out occasionally. Usually on Sunday nights as a little treat. Except, sometimes – I don’t wait to wait for Sunday night to have ice cream. Sometimes I want it on a Tuesday night just because.
So I decided I’d come up with my own recipe for ice cream. I’m someone who likes a lot of ‘stuff’ in their ice cream. I looooove chocolate chunks, coconut, nuts, sprinkles.. all of it. Lately, I can’t get enough of the chocolate coconut combo (Have you tried these Whole 30 Chocolate Coconut Bites?? OMG!). I’ve never had a chocolate coconut ice cream.. so I figured.. why not make it a thing?! So I did.In case you’re wondering – the delicious chocolate add-ins are from my favorite chocolate chip brand ever, Enjoy Life. If you’ve been following us for a while, you know that I love Enjoy Life Chocolate Chips. You can find them in pretty much any recipe that uses chocolate like this Healthy Cocoa Coconut Almond Butter Bread or these Healthy Banana Oatmeal Breakfast Cookies. Their mini chips are my favorite, but I love the Mega Chunks and regular Dark Chocolate Morsels too. It’s easy to love them because they’re all so versatile and taste delicious – but I really love that they are gluten-free, dairy-free, nut-free, and free from the eight most common allergens. While I’ve always appreciated this because so many people who I know have food allergies, it never really mattered that much to me until I found out I had my own food intolerance.
Many of you know that I took a food intolerance test a few weeks ago. I was pretty surprised when the results came back that I was intolerant to gluten. I had been tested for celiac disease just a few months ago and it was negative, so I thought I was in the clear. When the results came back – I couldn’t believe it! While I don’t eat that much gluten, it’s not something I have ever stayed away from (I love my pizza, pasta + bread!). After two weeks of not eating it, I’m already feeling completely different. My stomach isn’t bloated, I don’t have trouble digesting… It’s really amazing. Now that I know, I’m being super conscious about the products that I buy and double checking ingredients in things to make sure there isn’t hidden gluten. I know I can eat freely and not worry about having to double-check anything with Enjoy Life Foods. Their products have been + always will be safe to eat for me, and many of my friends and families that have allergies. Which means more ice cream + sweet treats for everyone!
- 5 pitted dates + 1 tablespoon water (blended to make a paste)
- 2 14 oz cans coconut milk (Coconut cream- keep in fridge for at least 4 hours)
- ¼ cup toasted unsweetened coconut flakes (I toast in an oven or toaster oven for 5-10 minutes until golden brown)
- ¼ cup Enjoy Life mini chocolate chips
- ¼ vanilla bean (scraped out from shell)
- In a food processor, puree dates in warm water to form a paste. Set aside.
- Scoop out the coconut cream from the cans of coconut cream OR coconut milk. Keep the liquid off to the side (It’s great for adding to smoothies!)
- In a mixer, whip the coconut cream until creamy and smooth. Then add date paste. Whip until fully incorporated. Fold in chocolate chips, toasted coconut chips and vanilla bean
- Press into container, cover with saran wrap + foil and freeze for 3-4 hours or overnight.
- Allow to sit for 20 minutes before serving.
- Scoop + enjoy!

Even though my intolerance to gluten is far less severe that people who suffer from celiac disease, it still means a lot to me. I spend so much time creating healthy recipes, working out, and doing my best to feel good. When that doesn’t happen it’s frustrating. It’s going to be challenged to swap in gluten free substitutes for my favorite baked goods, but having the freedom to be able to enjoy one of my favorite sweet tweets worry free is awesome! I’m not saying that I’m ready to ditch our Sunday night ice cream tradition just yet, but I will say that this is pretty darn delicious. It took a few tries to get the consistency right – but MAN is it yummy! I think it would be delicious with fresh strawberries and these Sugar Crisp Cookies Crumbled inside… what do you think??
