Ahhh the day I wait for all week – Friday! 🙂 More like Fri-YAY. This week felt like it went on forever! I’m so looking forward to relaxing this weekend. Check out what I’ve been up to all week and see what the weekend has in store with this week’s Friday Five.
The highlight of my week (well technically last week) was participating in the Closer to Free Ride on Sunday. It was truly an amazing experience, and I already can’t wait to do it again next year. You can read more about the ride and my experience in my last post – How Biking 25 Miles Changed My Life. I encourage everyone to participate in an event like this… Raising money for an amazing charity AND getting in a workout? What’s better than that.
When I was in college there was a really awesome natural foods store right near campus… I would go there a couple of times a week to get lunch, or just for a snack. I found Siggi’s there one day when I was looking for a quick snack, and I immediately fell in love. I had really only tried/repeatedly eaten the Vanilla one, which is really good. This was the only place I had been able to find Siggi’s, until last week.. First I found them at my local Stop & Shop…and then a few days later I went to Whole Foods and they had EVERY flavor imaginable!! The Pumpkin Spice is amazing, and I can’t wait to try the Coconut and Pomegranate Passionfruit!
I forgot how much I love this recipe! I hadn’t had these meatballs in a while so Sunday night I whipped up a big batch of them. When I do make these.. I make A LOT.. I used around 3 lbs of turkey. Then I eat them throughout the week for breakfast (weird I know), lunch, dinner and snacks! They’re really yummy with sauce over zoodles or whole grain pasta. I just bought a Canon Rebel T5 Camera so I tested out my photography skills and took some new photos of the meatballs and updated our old blog post. I think they look pretty delish 🙂 The meatballs are gluten free, and they can easily be made paleo if you don’t use Parmesan cheese! You can find the recipe here.
Going to Italy is pretty much my latest excuse for purchasing anything/everything. New camera… new purse…portable phone chargers.. and now new shoes! I’ve been wanting sneakers that are like Keds, but I wasn’t looking to shell out $38 for white sneakers that are going to get worn all over and likely ruined. The other day I was super excited to find these sneakers at Target.. they were only $16 and they came in a bunch of colors! I got red, white and grey. They’re so cute and comfy!
With Fall finally upon us.. I can hardly contain my excitement. I’m so ready for it to get colder! I’m hoping to go apple picking this weekend, whip up some healthy pumpkin recipes, and enjoy spending time outside.. whether it be biking, sitting by the fire pit, or lounging outside and finishing My Fight/ Your Fight by Ronda Rousey
