Ugh guys.. I can’t even tell you how much I love fall. I just can’t get enough of it! October is my favorite month, and these muffins = best way to kick it off. I’ve kind of got a thing for apples… As I’m writing this I’m drinking warm apple cider + burning a Honey Apple candle. My apartment smells ahhh-mazing! I love em’ so much so that next week I’m sharing over 20 recipes where they’re the star ingredient. Stay tuned 🙂
There’s nothing better than baking with apples. They make any baked good so sweet, and when you add in some cinnamon + other fall spices – the flavor is just soooo good. I love the traditional ways of baking with apples… pies, Healthy Apple Crisp, baked apples, etc. But I also love using them in different ways like in this Healthy Apple Peach Cake and in these Healthy Apple Cashew Butter Muffins.
The only thing I love as much as apples would probably be nut butter. I put it on errrrythang I can (as I’m sure you do too). So when my friends at Peanut Butter & Co reached out to me and asked if I wanted to try their new Bestie Nut Butters I was allll over it! They’ve added Almond Butter, Cashew Butter, and a blend of the two to their list of awesome nut butter products. The cashew butter one was without a doubt my favorite. It’s totally different from regular almond or peanut butter – it’s SO creamy. Which I knew would be perfect to bake with (or just eat directly from the jar with a spoon).
I don’t know about you guys.. but even though it’s only Tuesday, I’m already looking forward to baking these over the weekend. We’re going apple picking on Friday so I know we’re going to have an apple over load (which isn’t necessarily a problem). Saturday is my birthday… and then Sunday you will find me curled up on the couch under a blanket and reading a good book while I devour these. It’s been a crazy week so far, and these = the perfect treat to wind down with!
- 1 cup oat flour
- ½ cup applesauce
- ½ cup cashew butter
- 2 tablespoon honey
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¼ cup almond milk
- ¾ cup chopped apples
- In a large bowl combine all ingredients
- Bake in a greased muffin tin at 350 for 15-20 minutes
