Either you love cilantro or you hate it. There’s no middle ground. I happen to be in the camp of loving it, but if you’re not – don’t say ‘yuck’ and close out of this page just yet – I have an option for you too at the end of this post!
The other day I had a marathon cooking day. I cooked, took photos (and ate) 7 different recipes. All of which will be up here very soon! I think a lot of you know this, but I work full time in addition to running the blog. It can be really challenging to make + take pictures of all of my food after I’ve been at work all day. Usually I’m just too tired, and cooking/eating dinner is just about as much as I want to do. Weekends are my time to get all of my blog work done. (Yes, there is actually a lot of work that goes into blogging.)
When I was in college I used to meal prep everything on Sunday + get it ready for the week ahead. I had even longer, busier days then. I pretty much burnt myself out on meal prepping though. Back then I would eat the same exact thing evvvvveery day. Until Friday came around and I literally couldn’t even look at whatever was in my tupperware because I was so sick of it. Now I don’t meal prep as much, but when I have long days where I recipe shoot (which results in my fridge being super full for the week ahead!) I’m reminded of how nice it is to not have to cook all week!
As I was making my very last recipe on Sunday night – Adobo Chili Chicken Meatballs (SO yummy!) I had set up everything for the photo.. but they just looked a little blah. I knew they needed something, but I wasn’t sure what. Thankfully Tyler had the idea for this sauce. I was so tired at that point that even adding everything into the NutriBullet seemed like a monumental task, but I did it – and I’m sooo happy I did. Not only was this the perfect sauce for the meatballs – but I doubled the recipe so I actually had enough for tacos + other meals through out the week. It totally transformed my meals! (And it was so good for dipping these Clean Eating Chicken Tenders in!) Here’s how to make it:
- 4 tablespoons greek yogurt
- ¼ cup loosely packed fresh cilantro leaves
- Juice of one lime
- ½ tablespoon olive oil
- ⅛ teaspoon sea salt
- In a food processor or blender, puree all ingredients until smooth

Tyler and I couldn’t stop eating it. I love simple sauces like this, because it’s just proof that you don’t need super fatty/high calorie foods for dipping. Lighter greek yogurt + fresh herbs are all you need for a yummy, healthy sauce!
Now, as I mentioned earlier – I love cilantro and think it goes perfectly with all things, but if you’re not a fan you can totally swap in basil or parsley for the cilantro in the recipe. Both are equally delicious + make a perfect simple dipping sauce or topping for any meal.
