Can you guys believe its November right now and that Thanksgiving is just a week or so away? I know I can’t. I feel like it was just 5 minutes ago that we were sitting on the beach relaxing in the sun (as I type this I giving side eyes to my winter coat. It’s gettin’ chilly here in the North East!) Even though I’m not a fan of the cold, I do love Thanksgiving. Being with my family is my favorite thing. We have Thanksgiving dinner at my mom’s house and I love having everyone together to laugh and enjoy my favorite thing – food!
When I first started eating healthier, I was kind of shocked at some of the things that we eat on Thanksgiving. Now, don’t get me wrong – I’m ALL for indulging, but some of the classic recipes we make are just downright gross. I know that I’m a little picky/weird, but let’s just take Green Bean Casserole for example. Have you ever looked at ingredients in that?! We take delicious, healthy green beans and douse them in canned cream of mushroom soup (which grosses me out because who thought to make creamy mushroom soup. Bleh.), butter, and fried onions. The poor things don’t even stand a chance!
If you love green bean casserole I’m sorry if I’ve offended you. Maybe it really does taste good but IDK… I can’t even watch people eat it because it grosses me out so much! Now give me some homemade cornbread loaded with butter.. or fresh apple pie… NOW we’re talkin’. That’s the good stuff.
When I was a kid I loooooved the canned cranberry sauce.. Like literally would eat it by the jar. You know.. the one that maintains it’s shape no matter what you do to it and kind-of tastes/feels like jello + also has enough high fructose corn syrup in it to literally send you in to diabetic shock? (Minor exaggerations here, but you get the point.) Well one year I tried homemade cranberry sauce. My mind was blown. That stuff was DELISH! It tasted like cranberry sauce is supposed to taste! To this day – I rarely ever eat the canned stuff. Once you have the real thing, you can’t go back!
Now cranberry sauce is good on its own, and I had all intentions of sharing a cranberry sauce recipe with you guys to try on Thanksgiving. However, once I was in the kitchen I realized that the cranberry sauce would have a lot more flavor it had some apples in it. Two fall/Thanksgiving side dishes, all in one! We had apples that were on their way out so I chopped them up + put them in the pan while cooking the cranberry sauce. Once I tried it, I was hooked. The Cranberry Applesauce is a little tart, but sweet/full of fall flavor from the apples
This would be the perfect recipe to share with your family and friends on Thanksgiving… or make + keep for yourself! I put it in overnight oats, served it as a side with pork roast, ate it as a snack… the possibilities are endless!
Healthy Cranberry Applesauce
|Yield: serves 4 people|
- 1/2 c water
- 1 c whole cranberries
- 2 c chopped apples
- 2 tbsp honey
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- Bring water and whole cranberries to a boil. Cook for 5-10 minutes until they start to soften
- Add apples, honey and spices to the pan, and allow to simmer until apples and cranberries are soft.
