Crumbly peanut butter cookies + decadent brownies come together in these Healthy Peanut Butter Cookie Brownies – the ultimate gluten free holiday dessert!
You guys…. I’m really excited about this recipe. Now that we’re officially out of Halloween mode, it’s time to get ready for the holidays + all the fun they bring! (Also.. don’t get distracted by all these delicious pictures. We’ve got an awesome Starbucks giveaway at the end of the post!)
If you grew up in a big Italian family like I did – you know that the holidays are all about spending time with your loved ones, with a serious focus on food. From the pies and sweets we serve after Turkey dinner on Thanksgiving day to the seven fishes that we serve on Christmas Eve… We’re kinda obsessed with the food. And I’m totally cool with it because I come from a family of ah-mazing cooks!
When Immaculate Baking Co. reached out asking us to make a recipe with their wholesome baking products, I was totally all over it. I had just recently fallen in love with their Organic Chocolate Chunk Cookie Dough, and had my eye on many of the other products they have (Ya know.. like Sugar Cookie Mix, Cinnamon Rolls with Icing + Brownie Mix… all the good stuff!) Sometimes you just want something sweet, but also want to be lazy. (AKA all the time if you’re a dessert-aholic like me!) Immaculate’s products are PERFECT for this! Especially with the holidays coming up… there’s so many parties to go to and things to do.. why not spend a little less time in the kitchen, and more time with the people you love enjoying the season!
Enter: these Peanut Butter Cookie Brownies. Is it me or are peanut butter + chocolate just the ultimate combo? C’mon. I know I’m not alone here. A little bit of salty, a little bit of sweet.. it’s just perfection. Lately, I’ve been hardcore obsessed with these dark chocolate peanut butter cups. I had to stop buying them because I was just eating them non stop. After about two weeks of being off the wagon, I was seriously craving peanut butter + chocolate. So when I spotted this peanut butter cookie dough in the store… it sparked an idea.
I threw a few things in a bowl, crumbled some cookie dough on top, baked it in the oven and wah-lah. Out came the best darn brownies I’ve ever made. They’ve got the best fudgey, chocolatey base, and they’ve covered in patches of crumbly peanut butter cookie dough. Are you drooling yet?
Healthy Peanut Butter Cookie Brownies
|Prep:||Cook:||Yield: 10-12 brownies||Total:|
- 5 Immaculate Baking Gluten Free Peanut Butter Cookie Dough Balls, crumbled
- 16 oz peanut butter
- 4 egg whites
- ¾ c honey
- ½ c cocoa powder
- 2 tsp baking soda
- 1 c chocolate chips
- Preheat oven to 350
- Mix together peanut butter, honey + egg whites
- Add in cocoa powder, baking soda + chocolate chips.
- Pour brownie batter in to greased 9x13 baking dish.
- Crumble cookie dough over the brownie batter, covering the batter
- Bake at 350 for 25-30 minutes
This is for sure going to be my go to recipe during the holidays. It was so simple to make, and tasted so good! Plus, it’s gluten free… and seriously… who doesn’t love a brownie?!
