Sweet pumpkin donuts filled with apple chunks.. yum! These Healthy Pumpkin Apple Donuts are a delicious, must have fall treat.
I feel like I woke up on Monday morning and fall was over. Anyone else feeling like that? It snowed (yes, really snowed) on Sunday night, and it made me so sad! Now don’t get me wrong, I love how the snow looks and I actually don’t totally mind the cold (as long as I’m bundled up or under a blanket with a cup of tea), but it just makes me sad when fall is over. Between it being my birthday month, the crisp weather, the pretty leaves, and all things pumpkin/apple – it’s definitely my favorite season.
I’m doing my best to hold on to fall with these Healthy Pumpkin Apple Donuts. One of my favorite things to do during the fall is going apple picking. In addition having the best fresh apples, the place we usually go to also typically sells warm apple cider donuts. AKA heaven. There’s something about apple cider donuts that makes them utterly irresistible. I’ll be perfectly honest… put a donut from Dunkin Donuts in front of me, and I’ll probably just leave it alone. Put an apple cider donut within a few feet of me… and I’ll hunt you down for it. They have that crispy outside coated with sugar and all the warm flavors of fall… OK I’ll stop ’cause I know I’m getting hungry + I don’t want to torture you.
I’ve tried to make healthier apple cider donuts, but they just have never lived up to my expectations. While I’m all for trying to make better-for-you recipes, I also realize that somethings have to maintain their full-fat, buttery, sugary, fried integrity.. Ya feel me? I’m not gonna mess with a classic fall treat, but I can still be inspired by them! That’s where these Healthy Pumpkin Apple Donuts come in.While they may not be the same as a traditional apple cider donut, they’re still pretty damn delicious, and I think you’re going to love them!
- 1 cup oat flour
- ½ cup whole wheat pastry flour
- 1 egg
- ½ cup pumpkin
- 3 tablespoons honey
- 1½ cup almond milk
- 2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon nutmeg
- ½ cup apples, chopped into small pieces
- Mix all ingredients in a large bowl. The mix should be somewhat thick, but if it is clumpy or very difficult to stir, add in a little more almond milk or water.
- Spray your donut pan with coconut oil or olive oil.
- Spoon batter into a ziploc bag, cut the corner, and ‘pipe’ donuts into your pan - filling only ¾ the way.
- Bake at 350 for 15-20 minutes minutes

They’re kind of cake like, with warm apple chunks throughout the batter. SO yummy! They’d be the perfect breakfast before you get into your Thanksgiving feasts tomorrow… or really any day for that matter!
