Halloween is practically here! Can you believe it? Growing up, Halloween was without a doubt one of my favorite holidays. Dress up as whatever you like and go around getting all the free candy you can hold? Yea. Basically a dream come true. As I’ve gotten older I’m less and less into Halloween, but my love for the candy reigns true.
One of the things that I refused to give up when starting to eat healthier was chocolate. I know a few people who are so dogmatic about their diets/eating choices. People are all ‘I’m not eating xx’ or ‘I’ve removed xx from my diet’, but I don’t believe that’s a sustainable way to live. If it works for you – awesome, but I’m a serious chocoholic and I know that a life without chocolate is just not a life I want to live!
I will say that the candy business has some serious catching up to do when it comes to cleaning up their ingredients. There are a lot of companies out there that are still loading up their products with high fructose corn syrup, nasty dyes, and other mystery ingredients. Do we eat these products? Occasionally… But are things we regularly buy/ indulge in? No way. I was so excited when I stumbled upon Enjoy Life Chocolate Chips at the store a year or two ago. Better-for-you chocolate chips were the missing equation in all of my recipes. I would create something with really nutritious that tasted great, and had ingredients I was really excited about… but I always hated adding in chocolate chips with junky ingredients.
You all know that I love Enjoy Life Chocolate Chips. Any chocolate recipe you find on this blog will have them listed as an ingredient. Lately I’ve been in a rut with my snacking. I’m bored of my standard yogurt and fruit for a snack, and with everyone baking up fall desserts around me, the temptation is real. I knew I needed something to bring for a snack at work this week that would keep me full, but let me indulge in the fall fun.
I layered homemade pumpkin yogurt with a paleo cake crumble and Enjoy Life Chocolate Chips (link), but when I got ready to eat them at work I realized I had made a terrible mistake. There just simply wasn’t enough chocolate! Thankfully I have a secret stash of Enjoy Life Snack Packs at my desk. Their new snack packs are literally perfect for when you need something sweet, or to top off any snack! I poured them on top of my parfait and I was ready to eat! You’ve got to try it.
Healthy Pumpkin Chocolate Parfaits
- Cookie mixture:
- 1 tbsp unsweetened cocoa powder
- 1/4 c gluten free flour (sub for flour choice if paleo)
- 3 tbspcoconut sugar
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 1 tbsp avocado oil
- 1 tbsp honey
- 1 flax egg
- Yogurt mixture:
- 1.5 c nonfat greek yogurt or dairy-free alternative
- 1 tsp cinnamon
- ½ c pumpkin puree
- 1.5 tbsp honey
- 1.4 tsp nutmeg
- ¼ tsp ginger
- Other Ingredients: Enjoy Life Mini Chips or Snack Packs
- Preheat oven to 350
- Make cookie batter. Pour batter in the form of a circle on a parchment sheet and bake at 350 for 12 minutes.
- While cookie is baking, mix pumpkin yogurt mixture together and set aside
- Allow cookie to cool and crumble into pieces.
- Layer yogurt, cookie crumbles and Enjoy Life Mini Chips in a glass or container.
These Pumpkin Chocolate Trifles are great for an easy snack, but they would also be super cute for a Halloween or fall party. Since they are gluten and nut free and easily made dairy free – everyone can enjoy them! We aren’t having a Halloween party, have a stash of these snack packs to celebrate the holiday! I don’t think we’ll get trick or treaters at our apartment, but I’ve made up cute little bags with Halloween crafts and toys for the little kids in our life. Aren’t they adorable?!
