Happy Valentine’s Day friends! Today is a day that was basically made for chocolate, so it’s only fitting that I share this Healthy Single Serving Chocolate Chip Cookie Recipe with you! It’s perfect if you’re a party of one, but still want to celebrate with a little sweetness… or if you’re a couple (like us) you can double the recipe and indulge a little bit healthier than usual!
I personally feel like you don’t need a holiday to enjoy a cookie.. but we might as well celebrate this over commercialized holiday some way… right?
Valentine’s Day is kind of a running joke between me and Tyler. While we were dating, we were always away from each other on Valentine’s Day because we went to different schools. We didn’t really care because… like I said earlier – it’s a made up, commercialized holiday. We’d rather show each other we love each other all 364 days a year.
Anyways – one year Valentine’s Day was on a Friday, so Tyler was able to come home for the weekend. Since we hadn’t celebrated Valentine’s Day together basically ever, we decided we would go out to our favorite Italian restaurant. We were so excited – we hadn’t seen each other in weeks, we were going to get this delicious dinner at our favorite restaurant… It was gonna be great.
Until it wasn’t… We were a little naive and didn’t realize that restaurants pretty much suck on Valentine’s Day. There was a tiny pre-fixed menu that didn’t have our favorite dishes on it, the restaurants was jam packed, and the prices were about double what they normally were. Then when we got our food it was the tiniest portion, ice cold and bland (Probably because it has been cooked days before and had just been sitting in the kitchen with all the other prefixed meals). It was pretty much the worst experience ever.
After that – we decided we would never go out for Valentine’s Day. So now we cook our own dinner at home. Tyler is in charge of the meal, and I’m in charge of dessert. (Even though these cookies are delish, I opted to go a little bit more decadent and make this deliciousness.) It’s much more special, and to be honest.. we’re both pretty darn good cooks, so who needs a restaurant?!
If you’re like us + cooking dinner at home tonight – this would be the perfect easy dessert. It’s easy to make, has simple ingredients + is the perfect ending to any dinner! Here’s the recipe…
Health Single Serving Chocolate Chip Cookie
|Prep:||Cook:||Yield: serves 1 person||Total:|
- 2 tablespoons old fashioned oats, pulsed into flour
- 1 teaspoon vanilla extract
- 1/2 tablespoon honey
- 1 tablespoon melted coconut oil
- 1/4 teaspoon baking soda
- ¼ teaspoon baking powder
- 1 tablespoon mini dark chocolate chips
- Add 2 tablespoons of oats into a food processor and pulse until it becomes a flour-like consistency.
- Stir in vanilla, honey, coconut oil, baking soda, baking powder and mini chocolate chips.
- Spray a small ramekin with cooking spray of choice
- Pour batter into ramekin + microwave for 30-35 seconds
