We established earlier this week that I had a love affair with Healthy Baked French Fries. They’re without a doubt my favorite side dish, but as with all things that I make – I’m always looking for ways to try to make them that much better. That’s where this mayo comes in.
Now- if you’re like me, you might be thinking – mayo? No thanks. I get it. Similar to french fries, mayo gets a pretty bad rep. Let’s just be clear and say that all mayo isn’t created equally. I’m not going to name names.. but you know who I’m talking about when I say that some brands have added preservatives, gross oils, and funky ingredients. For pretty much my entire life I stayed away from mayo because I wasn’t a huge fan of the consistency, or the ingredients. Until now.
When Chosen Foods asked me if I wanted to try their new Coconut Oil Mayo, I was intrigued. I love cooking with coconut oil because it’s a great source of MCT’s, and much cleaner/better for you than some of the other oils out there. (Don’t let all this crazy news fool you!) I also am pretty much obsessed with their Avocado Oil Spray, so I figured that if it was the same geniuses that made that, the mayo had to be pretty good.
Tyler tried it on a sandwich and really enjoyed it, but I knew I wanted to doctor it up give it some of my own flair. That’s one of the things that I love about a product like this – it’s great on its own, but it can also be transformed to include your favorite flavors. Sun-dried tomatoes and basil are one of my favorite savory flavor combinations, so I decided to give it a try with this. It was SO yummy!!
- 4 tablespoons Chosen Foods Coconut Oil Mayo
- 3-5 whole sun-dried tomatoes
- 2 tablespoons fresh basil
- 1 tablespoon fresh parsley
- ½ teaspoon black pepper
- In a nutribullet or food processor, blend all ingredients until smooth

Mayo is super versatile, so you can use it in pretty much anything you like. this was a really yummy dipping sauce for these Healthy Baked French Fries, and it would also go great on a burger (along side the fries, obviously! Fries = everything!) I love that this mayo is soy & canola free because it’s made with coconut oil, and that it’s made with cage-free, organic eggs.
