Warm up with this delicious, Healthy Chocolate Brownie Skillet. Soft chocolate cake with dark chocolate chunks is the perfect lighter dessert!
As I’m writing this post I’m sitting in my bed and actually shivering. When did it become winter guys?! It was warm, and leaves were turning colors one day, and then I woke up one morning and it was practically the arctic. What the heck?
No worries though, I’ve found the perfect way to warm up. No… it’s not a blanket, or a boyfriend (Hi Ty!), or sweatpants. It’s this Healthy Chocolate Brownie Skillet. (Note: I’m sure the blanket/boyfriend/sweatpants route will work if you’re cold… but it’s not chocolate cake, so let’s be real.)
Confession: I didn’t know that we even had a skillet until about 2 weeks ago. I was trying to organize our cabinet with the pans (which despite my best effort ALWAYS is a mess), when I came across one in the back. Tyler has this habit of buying completely unnecessary random kitchen items, so I knew he was the culprit. (Dead serious…. Need a pancake pen? Come to our house. Or these pepper corers? Completely necessary.)
Anyways…. I saw the skillet and thought, why do we have this? & What can I do with it? That afternoon I stumbled upon this Pumpkin Chocolate Chip Skillet Cookie Recipe from Fit Mitten Kitchen, and I felt like it was meant to be. I obviously couldn’t pass up a giant pumpkin chocolate chip cookie, so I made it and decided that the skillet and this recipe were two of my new favorite things! (Seriously… go try it. I loved it so much I made it twice in one week, and tricked my butter/sugar loving family into eating it for dessert!)
Anyways, back to the brownie skillet. I was so in love with the Pumpkin Chocolate Chip Skillet I had to experiment and see what I could come up with. Chocolate/Brownies are always my go to’s when I need something sweet (Could you tell… I mean look at all the chocolate recipes we have on the site…) I took a few different recipes from the blog, tossed the ingredients together, and this Chocolate Brownie Skillet was born!
Here’s the recipe:
- 1 cup almond butter
- ½ cup honey
- ½ cup pumpkin puree
- 1 egg
- 1 tablespoon melted coconut oil
- 1 teaspoon pure vanilla extract
- ½ cup whole wheat pastry flour
- ¼ cup cocoa powder
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- ½ cup Chocolate Chips or Chunks
- Preheat oven to 350
- Mix almond butter, honey, pumpkin, egg, coconut oil + vanilla extract together.
- Add in flour, cocoa powder, baking powder + baking soda.
- Stir thoroughly until batter is mixed.
- Fold in chocolate chips/chunks.
- Pour in to greased 10 inch skillet
- Bake at 350 for 25 minutes

I highly recommend you make this ASAP. I made it for myself on my birthday (cause you can never have too much cake) and it’s become one of my favorite recipes. Warm it up with a side of coconut whipped cream or Arctic Zero ice cream… perfection!!
So now that I’m practically a skillet pro… any recommendations on what else to make with it? I’m thinking I have to try a savory dish next… Any ideas?
