Have a serious sweet tooth but hate refined sugar? This Paleo Chocolate Bark is loaded with antioxidants, healthy fats & chunks of nuts + Fuel snacks! This post is sponsored by Foodie Fuel & Mambo Sprouts but all opinions are our own.
There is seriously nothing better than biting into a giant piece of chocolate. You know when you’re just craving something sweet + take that first bite? Ugh. HEAVEN! I’ve been a chocolate lover for pretty much my entire life. As a kid I adored M&M’s and as I got older Hershey’s Kisses, Reese’s PB Cups + Lindt Truffles were a major part of my food group. In high school when I needed a snack I’d grab a Snickers Bar. (I was practically a pillar of health from a young age…. not) You get the picture here, right?
As I’ve gotten older I still love chocolate, but I’ve refined my tastes a little bite. While Snickers bars are delicious, they’ve got some pretty gross ingredients in them that I try to stay away from. Now I stick with super dark chocolate that has minimal sugar in it. I think that our palates just change as we get older + while I’ll always love sweets, I just enjoy different types now.
A few weeks ago Foodie Fuel sent me the most delicious package of Fuel Snacks. They make these little cracker-like snacks that are made with nuts, seeds + spices. They’re all organic, gluten free, non-GMO + paleo friendly. They remind me of a crispy granola bar, but no where near as sweet as the store brands + really crunchy! Ty and I snacked on them pretty much all weekend last week when we were snowed in.
I had a few ideas on how to use them in a recipe.. but nothing seemed to really be working out in my head. I was chatting with one of my friends who suggested to put them into a superfood chocolate bark which was TOTALLY genius! So I practically sprung off the couch and ran to the kitchen.
For those of you who have never made chocolate bark.. it’s extremely simple. You just melt chocolate (add a little bit of oil to make it smooth) and add in your favorite toppings. I pulsed the Swiss Chocolate Fuel Snacks into tiny pieces, chopped up some pecans + mixed it in with the chocolate. It was seriously heavenly!
These Fuel Snacks are great for enjoying on their own as they have healthy fats, protein, carbs + a low amount of sugar. It’s hard to find snacks that can satisfy a sweet tooth, taste great + have a balanced nutritional profile. Obviously when you add more chocolate to them they turn more into a treat than a snack, but talk about yummy! I chopped the bark into small pieces + have been enjoying a little square here and there throughout the week. It’s not going to last very long….
