Cookies… for breakfast? Yep. We’re going there guys. There’s nothing better than a healthy, portable breakfast that tastes great – and these are just that! Oh and they’re gingerbread flavored..and made with super affordable, high quality ingredients…. so basically they’re amazing.
I don’t know about you, but I hate cooking breakfast. Mornings are tough as is… At least for me. I used to love getting up early but now that I work closer to home I’ve definitely learned to love sleeping in. It also might just be because it’s been so cold. Its so hard to leave a warm bed and get up and out in the cold! Regardless – having to cook something when you’re still a little sleepy is a just big no in my book. It feels like a lot of work, and then you have to clean it all up (or leave a big mess for you to come home to later). No fun.
As with most of my other meals – I’m all about meal prepping breakfast. I’d rather spend some time over the weekend and make my breakfasts for the week rather than try to throw something together before the caffeine has made it’s way to my brain in the morning! I love making baked oatmeals like this one, or a simple frittata for Tyler. It makes mornings much easier. And when I can make that breakfast with great ingredients without breaking the bank… even better!
You guys know how much I love Whole Foods. If you follow me on Instagram and watch my stories.. you know I’m there practically everyday. We live walking distance to one (it’s right across the street) and I won’t lie when I say that was a major selling point when we were looking for apartments. Whole Foods has been one of my favorite stores for a long time, mainly because they just make it easy to eat better. They’ve banned things like high fructose corn syrup and artificial preservatives from the store.. and while I’ll always read my ingredients, it helps when there isn’t a laundry list of things to try to comb through. I can actually pick up products and feel good about buying them.
Another thing that I love about Whole Foods is that they have both specialty items, and everyday items. I can count on them for having that random mustard from a tiny brand in the Midwest at $10 a bottle in stock.. but I can also count on them to have affordable options for everyday things like fruits, veggies, and pantry staples! Their 365 Everyday Value Brand has everything from tortilla chips to household cleaners… and almost everything you need to make these cookies! The prices are very reasonable, and totally within our budget. I love that I can buy organic goods at great prices and not worry about spending a fortune.
