It’s pretty much a giant bowl of fluffy, cloud like deliciousness bursting with mini chocolate chips, coconut flakes + almond slices. AKA, an Almond Joy in breakfast form. SCORE!
I like to think that I’ve made a lot of delicious overnight oats over the past few years. While these Healthy Berry Overnight Oats are probably my favorite, and the only recipe for them on the site, I’ve experimented with countless concoctions in my kitchen that have been equally delicious. But if we’re being totally honest.. they’ve never been as creamy as these oats. All of my overnight oats have tasted great and served me well as a quick breakfast over the past few years, but I’m just going to come out and say it…They’re no where near as yummy as these Healthy Creamy Almond Joy Overnight Oats. I think it’s because of the secret ingredient…
Are you wondering what the secret ingredient is? I’ll tell you. It’s kefir. Now before you go ‘ke-whaaaat?’ let me explain. Kefir is a tangy cultured milk smoothie that is high in protein, calcium and
vitamin D. It’s great for drinking or adding to soups and smoothies, but it’s apparently even BETTER when you add it to overnight oats. I found this out on a total whim. Here’s the story… On Sunday night Ty and I were prepping for the week and getting ready to figure out what we wanted to have for breakfast on Monday. We hadn’t had overnight oats in a while, and decided that would be a nice change-up. Buuuut we were out of milk. You can make overnight oats with water – but I don’t care what anyone says, they’re not as good.
Thankfully, we had just gotten some Lifeway products sent to us to try. I had never had Kefir before, but I figured that it couldn’t hurt to try it in the overnight oats. Even if it didn’t taste great, I figured it would give us an extra boost of gut support, due to all the live/active cultures that kefir has! I shook up the oats, put them in the fridge, and hoped for the best. When we tried them in the morning I honestly felt like I was eating dessert. THAT’s how yummy they were! The kefir made them so soft + creamy, we couldn’t stop eating them. You have to try them!
- ½ cup old fashioned oats
- ¾ cup Coconut Lifeway Kefir
- 1 tablespoon mini chocolate chips
- 1 tablespoon toasted unsweetened coconut flakes
- 1 tablespoon sliced almonds
- In a mason jar or container add all ingredients and shake well until combined.
- Store in refrigerator for a minimum of 6 hours.
- Eat warm or cold in the morning!

I’m not trying to toot my own horn.. but can you look at that thickness? No runny, soupy overnight oats over here! Only the thickest, most delish overnight oats you’ve EVER seen! I guess running out of milk was probably a good think to happen… We started making all of our overnight oats with kefir. Tyler has really liked using the unflavored kefir with lemon zest, honey, and fresh blueberries. Talk about yummy! Maybe I’ll share that recipe next, but for now – I’m sticking to these ingredients: chocolate, coconut, and almonds. You can’t go wrong with having a healthy candy bar in breakfast form!
