I’m not kidding when I say I’m obsessed with this recipe. I was making it for what was probably the third or fourth time when I realized… wait a second… this isn’t on the blog. Which means there are people out there who are totally missing out on this deliciousness. (Don’t worry guys – crisis averted, I’ve got ya covered) The shaved brussels sprout salad addiction started a few months ago when we were out at a local restaurant and I got this salad. It had shaved brussels, dried cranberries, apple, Parmesan and pumpkin seeds. I ate the entire bowl in about 2 seconds.
Then I tried out Purple Carrot, which is a vegan meal delivery service. They had a warm brussels sprout salad that was topped with a creamy avocado dressing… AKA heaven. The meal was meant to be for two people.. but I hoarded it and really only let Tyler have a bite…. that’s how good it was. It was also super easy to make, and I knew I had to replicate it in my own way. Since then… I’ve been making this almost weekly!
The base of the salad is obviously shaved brussels sprouts (which only take about 3 seconds to make if you use the veggie bullet), and then I filled it with all of my favorite nuts/seeds that I got from Lucky Vitamin, AKA my favorite place to shop! For the past year or so I’ve been ordering all of my vitamins, snacks + baking supplies from them. They have a huge variety of products at ridiculously low prices. It was honestly as if it was meant to be, because I ordered walnuts, pecans, hemp seeds, and dried cranberries a few weeks prior to trying out the brussels sprout salad + falling in love with it. So once I had gotten hooked, I already had all the ingredients to make it on my own!
I was really excited to find these dried cranberries on Lucky Vitamin. Many dried cranberry brands are sweetened with sugar, which stinks! I try to limit my refined sugar intake because it really has no nutritional value. When I saw that these were sweetened with apple juice I was really excited! They’re great for all my paleo/Whole 30 peeps out there who don’t eat added sugar. They’re the perfect little bit of sweetness in what is otherwise a delicious savory dish.
I don’t know about you guys, but one of my ongoing resolutions (I don’t make New Year’s resolutions) has been to eat more veggies! It’s not that I dislike them or anything like that… I honestly just forget to eat them sometimes! When I have a giant bowl of this in the fridge I can easily add a scoop to my lunch, or have it as a snack! My goal is to eat 3-4 servings of vegetables a day, which can be hard – so this is great to have on hand. You have to try it!
