Have you ever been stuck in a breakfast rut? I totally have. It usually happens when you eat the SAME thing practically every day until you get to the point where you look at whatever it is and go “I CAN’T eat this again!” Sound familiar? This used to happen to me all the time in college. I would prep something on Sunday night and then have it for breakfast every day. Usually by the time Thursday rolled around I was so sick of whatever it was that I didn’t want to eat it again.
This exact feeling is part of the reason why I stopped doing serious meal prepping. When I was in school, eating was really more like a chore. I had to pack my lunch and dinner with me most days – so there wasn’t really any time to cook during the week. Now that I have more free time, I usually cook every night. On Sunday’s I’ll prep things like veggies or meat & grocery shopping – but I rarely ever make something to eat for the entire week!
I get bored quickly when it comes to food, especially breakfast. I don’t eat eggs or bacon because I don’t really like them, pancakes or waffles sometimes are too much work.. so that leaves me with toast as my breakfast go to. Toast has always been one of my favorite things to enjoy for breakfast, although my tastes have totally evolved since I was a kid. When I was younger I would eat ciabatta bread with butter almost every day (it’s still one of my favorite things). Now I try to pick more wholesome options for breakfast, like Ozery Bakery Morning Rounds. This Date & Chia Ricotta toast is probably my #1 go to. Ricotta is basically like fancier, grown up cream cheese. I could pretty much eat it on a spoon, but when you pair it with a slightly sweet Date & Chia morning round.. talk about delicious!
Date & Chia Ricotta Toast
- 1 Date & Chia Ozery Bakery Morning Round
- 2 tablespoon ricotta
- 1 tablespoon julienned basil
- ¼ teaspoon red pepper (or less for less spice)
- Pinch of sea salt
With it being full blown fall – I couldn’t leave out an apple toast recipe! I used to eat toast with PB & apples almost every morning a few years back. It’s still one of my favorite things!
Apple Cinnamon Toast
- 1 Apple Cinnamon Morning Round
- 2 tablespoon almond butter
- ½ an apple, sliced thin
- ½ tablespoon honey
- 1 tablespoon hemp seeds
This one is probably everyone’s favorite.. but a cinnamon raisin morning round with bananas, peanut butter and chocolate almost seems like dessert to me! A sprinkle of mini chocolate chips can brighten up any crazy morning!
Cinnamon Raisin Banana PB Toast
- 1 Cinnamon Raisin Morning Round
- 1 tablespoon peanut butter
- ½ small banana sliced
- 1 tablespoon mini chocolate chips
If sweet breakfasts aren’t your jam – no worries. This savory avocado toast combo is the BEST. Goat cheese, everything bagel seasoning.. yum yum yum!
Avocado Goat Cheese Toast
- 1 Date & Chia Morning Round
- ½ an avocado, mashed
- 1 tablespoon goat cheese crumbles
- ½ tablespoon everything but the bagel seasoning
Know how delicious a margherita pizza is? This is basically the same things in a breakfast form. Tomato, basil, mozz and balsamic glaze = match made in heaven.
Tomato, Basil, Mozzarella & Balsamic Glaze Toast
- 1 Muesli Morning Round
- 3 mini mozzarella balls, sliced thinly
- 2 large tomato slices
- 1 tablespoon basil, shredded
- ½ tablespoon balsamic vinegar reduction
This was a random combo that I came up with the other day when my pantry was looking a little bare. I’ve been a huge fan of cashew butter lately, and when you combine it with chia & coconut flakes.. OMG yum!
Cashew Chia Coconut Toast
- 1 Cranberry Orange Morning Round
- 2 tablespoon cashew butter
- 1 tablespoon toasted coconut flakes
- ½ tablespoon chia seeds
Breakfast doesn’t have to be boring! In addition to being easy, and portable – there are SO many different combos you can make with toast!
