Sweet Roasted Plantain Chip Recipe

  • 2 plantains (sliced thin)
  • 2 tablespoons melted coconut oil
  • ¼ c honey
  • 1½ tsp cinnamon
  • ½ tsp ground ginger
  1. In a large frying pan, melted 1-2 tablespoons of coconut oil until the entire bottom of the pan is coated.
  2. Drop the plantain slivers one by one so that they are not over lapping.
  3. Cook for 3-5 minutes and then flip and repeat on the other side.
  4. The chips should be a golden brown.
  5. When the chips are done cooking, drizzle them with the honey, cinnamon, and ginger.
  6. Use a spatula to toss the chips until they are all evenly coated.
  7. Set the chips on parchment paper or a baking rack to allow them too cool off a bit.
