Ingredients for Chicken Thighs on Grill
For these chicken thighs, you’ll need:
- boneless chicken thighs – these cook super quick on the grill but stay juicy which is why we love them
- olive oil
- red wine vinegar – a little acidity adds flavor to the chicken and helps keep it tender
- stone ground mustard
- spices: dried basil, dried parsley, dried oregano, garlic powder, onion powder, salt, pepper, red pepper flakes
This meat thermometer is also really helpful to have!

Chicken Breasts: We haven’t tried this recipe with boneless chicken breasts or chicken tenders, but I think it would work great. You might need a little less time depending on the cut of the chicken. Olive Oil: You can substitute avocado oil or melted butter.
Spices: Any spices will work in this recipe. Feel free to substitute whatever seasonings you like!

How to Grill Chicken Thighs
- Mix together marinade. Add room temperature chicken thighs to the marinade and toss to coat evenly. Let the chicken marinate for at least 15 minutes while the grill is preheating to medium heat. (You can marinate for 2-5 hours if you want to prep ahead of time!)
- Place your boneless chicken thighs skin side down on the grill and close the lid. Let the chicken thighs cook for 8-10 minutes or until golden brown with a slight char. Flip over to the other side and finish cooking for another 8-10 minutes until the internal temperature is 165°.
