If I had to pick a favorite food it would definitely be pizza. It is for sure right up there with my second favorite food, pasta. Cause.. carbs, duh. I grew up in Connecticut, which is allegedly famous for having the best pizza in America. (New Yorker’s I know you’ll probably want to debate, but I feel like we have this one in the bag). There are pizza places pretty much every where you turn around here.. and there are even pizza trucks! Which if you haven’t seen. it is basically a dream come true – they come to your house and make pizza FOR you (for a pretty penny, obviously). Needless to say, after years of eating good pizza – I am a bit of a pizza snob. And not ashamed of it.
What do I mean when I say I’m a pizza snob? I mean I don’t want to eat greasy, half cold pizza as takeout from the random pizza place down the street. You know the ones that I am talking about. They all have those same generic boxes, the pizza looks like it came out of a freezer, the cheese is gross and somewhat hard because it’s not good quality, and the sauce is meh. I have zero interest in that. Sometimes I’ll be at work or at a party where they are serving it, and people will say ‘Oh, just have a slice!’ or make comments that I don’t eat it because it isn’t ‘healthy’… when in reality isn’t true, I just think it’s gross! If I’m going to eat a pizza, I want it to have great dough, fresh, delicious ingredients, and be piping hot. There are a few places that make craft pizza locally that we love to go to.. but if we don’t feel like going out, I just make my own!
Making pizza may seem like a totally foreign thing to some people, but as a kid – my mom always made her own, so I do the same! My favorite combo lately has been Simple Mills Pizza Dough with local mozzarella, tomatoes & basil. So light and fresh – it’s the best!
When I went to Whole Foods Market this week one of the first things I grabbed was pizza dough. Our local store has a great whole wheat dough that always comes out perfectly. I didn’t know what I wanted for toppings – so I did what I always do.. shop the sales! I love looking for deals when I’m shopping. It helps me save money (because you know I’m all about Eating Healthy on a Budget) and it challenges me to get creative with different ingredients. I knew I wanted some sort of protein on the pizza – so I was excited when Organic Chicken was on sale (Only $4.99/lb, which is awesome!) I don’t always buy organic meat because it can be so expensive. But if it’s only a few dollars extra – I’ll splurge on it!
I already had organic grapes in my cart because they were on sale too (Only $1.69!) which made me think.. hm – maybe this could be an interesting combo?? I don’t usually put fruit on pizza, but I thought it would be yummy! I grabbed some salty things to balance out the sweetness of the grapes like pesto (I love the Whole Foods Market brand one because it has minimal ingredients!), and two of my favorite cheeses.. because what’s a pizza without good cheese?! Annnnd the result was EPIC. You guys have to try this combo!
Tyler and I could NOT stop eating this. We basically inhaled it. And I think you will too. It definitely might seem like an odd combo – but I promise it works SO well. This is what I mean when I talk about a good pizza… Fresh quality ingredients, made with love, and SO yummy.

Healthier Chicken Pesto Grape Pizza
- 1 lb whole wheat dough
- ½ cup pesto
- 1 cup Organic chicken shredded
- 1 cup mushrooms
- 1 cup Organic grapes halved
- ⅓ cup parmesan cheese
- ⅓ cup goat cheese
- ½ teaspoon pepper
- Preheat oven to 450.
- Roll out dough to be about a ⅓ of an inch thick. (Tip: let your dough sit out at room temperature for about an hour to make it easiest to work with.)
- Spray a baking sheet with olive oil and sprinkle with cornmeal. Lay crust directly on top and bake crust for 5 minutes with no toppings
- Once the crust has baked slightly, spread to coat the dough with pesto. Add chicken, mushrooms, grapes, parmesan cheese, goat cheese and pepper.
- Bake for 20 minutes until dough starts to brown. Serve + enjoy!
- Optional: Broil for 1.5 minutes to brown the goat cheese & drizzle with balsamic reduction
