I know that it’s June… buuuut I’m sharing an apple cinnamon recipe with you. As far as I’m concerned – fall flavors are applicable year round. This is one of the first recipes that I ever posted on the blog, and it’s one of my go-to breakfast recipes for lazy Sunday mornings.
Pancakes are without a doubt my favorite breakfasts. Growing up as a kid, I loved eating them. My mom would make us homemade ones on the weekends, and I can always remember being so excited to have them. When I started eating healthier I stopped eating them almost all together. (Cue the tears)
Then I got creative… because who wants to give up delicious, fluffy pancakes in the name of being healthy?? Not me. I found out that if you skip the butter and oil, swap the white flour for oat flour, sugar for honey, and add in some chopped fruit – you’ve got a pretty healthy breakfast!
I’ve found that eating healthier is all about the tricks. By making small, simple sways, you don’t have to give up anything! It’s all about getting creative and trying new things. Here’s how I made these:
Healthy Apple Cinnamon Pancakes
Ingredients
- 1 1/2 cup oat flour
- 2 tablespoons ground flax seed
- 1 cup milk
- 2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 3 tablespoons honey
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup chopped apples
Instructions
- In a large bowl add in oat flour, milk, flax seed mixture, egg, milk, spices and chopped apples.
- Pour batter on a greased griddle or in a frying pan until light brown.
- Top with sautéd apples or maple syrup + enjoy

Can we leave out the flaxseed ? Do you have to use baking powder and soda or either or ? Also I’m vegan so can I use a chia egg instead ? And for step two do you put those into the blender after you’ve mixed and do you chop up the apple to mix in there? Sorry for all the questions but I have had a good pancake in 5 years almost 🙁

I have only ever made these pancakes as is – so I’m not sure how they would turn out if you make those substitutions. I wouldn’t leave out the flaxseed. I would use both baking soda and powder as the recipe calls for. I’m not sure how a chia egg would work as I have never baked with those. The only thing that needs to be blended is the oats to turn them in to oat flour. I would not blend the apples as well. Thanks!
