These might be my most favorite donuts… ever. If you’ve been following us for a while.. you know I’m the donut queen. Chocolate Coconut, Strawberry Shortcake, Blueberry Pie… the list goes on and on. There’s just something about them. It’s basically cake.. but when you put it in a donut pan it tastes 100% better… ya know? As if donuts on their own weren’t good enough, I decided to add some coffee to them. Lemme tell you… Best idea EVER.
You may know this already, but I’m a bit of a coffee snob. I worked at a coffee shop for years in college, and they sold some of the best coffee sourced from around the world. We often were able to try beans that were sold at over $100 a pound, which was really cool! Needless to say, I have expensive taste when it comes to coffee. (Can ya blame a girl?) However.. with moving in to a new apartment, and trying to save some money, I’ve stopped going out for coffee in the morning and switched to making it at home.
I was recently able to try NESCAFÉ® Taster’s Choice®, and I was pleasantly surprised by how good it was. Now I know what you’re thinking… instant coffee couldn’t possibly be good. But I promise you… it really is! When I learned that the only thing I had to do was add hot water to the coffee, I was skeptical.. and then I had that first sip.
Is it me.. or is the first sip of coffee always the best? There’s nothing better when you wake up in the morning half asleep and finally get that first sip of coffee. It’s SO good. This cup did not disappoint. I was so surprised how flavorful the NESCAFÉ® Taster’s Choice® coffee was. It was very rich + smooth – perfect for waking me up in the morning! The only problem was just that it was missing a little something. A good cup of coffee always needs something sweet to pair with it.. so that’s where the donuts come in.
I used a mix of brewed and ground NESCAFÉ® Taster’s Choice® coffee in these donuts and the result was AMAZING! The donuts are just completely filled with rich coffee flavor. Plus, the little chocolate drizzle on top gives them the perfect amount of sweetness. I honestly couldn’t stop eating them + I know you’ll want to do the same.
Healthy Cappuccino Donuts
- Preheat oven at 350. Prepare a greased donut pan to prevent donuts from sticking
- Combine warm water and flax seed meal to create 'flax eggs'. Allow it to sit for 5 minutes to thicken/solidify.
- In a bowl combine 'flax eggs, honey, almond butter, brewed coffee and almond milk. Stir until combined. Fold in dry ingredients. The mix should be somewhat thick, but if it is clumpy or very difficult to stir, add in a little more milk or water.
- Spoon batter into a ziploc bag, cut the corner, and ‘pipe’ donuts into your pan.
- Bake at 350 for 15 minutes.
