Healthy Cocoa Coconut Almond Butter Bread is perfect for breakfast or brunch. Made with sweet cocoa, coconut + creamy almond butter – it’s such a treat!
Have you ever tried something and known immediately that it was going to be one of your favorite things to eat? That’s how I feel about Barney Butter’s Cocoa + Coconut Almond Butter. I’ll admit – I really wasn’t much of an Almond Butter eater until I started to loosely follow a low FODMAP diet. I was eating tons of peanut butter and finding that it was really hurting my stomach. When I learned that peanut came from the same family as beans (legumes) it sort of made sense, but still made me sad because peanut butter was my go to! I would throw it in shakes, have it on toast, bake it in oatmeal. You get the picture here.
I was pretty much forced into making the switch to almond butter… and I seriously wasn’t happy about it until I tried Barney Butter. A friend gave me a jar of their Cocoa + Coconut Almond Butter as a gift one year (that’s the sort of gift you get when you’re a foodie!) and I was instantly HOOKED! Seriously… I couldn’t stop eating it with a spoon. I put it in/on everything.
When Barney Butter asked me if I was interested in being an ambassador for them last year, I was like heck YES! Gimme allll the almond butter! The sent me an amazing package with multiple jars of each of their flavors and I was so excited to start baking with all of them. This Cocoa + Coconut Almond Butter Bread is the first thing I came up with, but I’ve also found a few other ways to eat almond butter…
#1 With a spoon. (Tried and true method.)
#2 In oatmeal. Seriously, if you add a tablespoon of almond butter to your oatmeal while it’s cooking it makes it SO creamy! I’m in love with the texture it adds.
#3 In sauces. I love this Almond Butter Sauce. It goes well on pretty much anything
#4 As a topping for waffles/pancakes. I melt one tablespoon of nut butter with 1/2 teaspoon of coconut oil for a delicious, smooth sauce that goes well on basically anything!
#5 As a mix in for my favorite ice cream
#6 As frosting for these Clean Eating Protein Donuts
I think this Cocoa + Coconut Almond Butter Bread is my favorite way to enjoy it. Chocolate + coconut is such a delicious combo. I used to love Almond Joys + I this is basically like that in a healthier, bread form. I think you guys are going to love this.
- ½ cup Barney Butter Cocoa + Coconut Almond Butter
- ⅓ cup honey
- ⅓ cup unsweetened applesauce
- ¼ cup egg whites
- ½ cup melted coconut oil
- ¼ cup almond milk
- 1 tablespoon cocoa powder
- 1 cup whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ cup shredded unsweetened coconut
- ¼ cup mini chocolate chips
- Optional: coconut flakes + chocolate chunks for topping
- Preheat oven to 350.
- Mix almond butter, honey, applesauce, egg whites, coconut oil and almond milk.
- Add in dry ingredients. Mix well.
- Bake in a greased 9x5 loaf pan for 40 -45 minutes.

I mean seriously.. LOOK at those chocolate chunks + the toasted coconut. Are you not drooling?? I know I am! I brought this to Palm Sunday Brunch for my family + they all gobbled it up! They didn’t even know it was healthy! 🙂 This would be perfect for serving on Mother’s Day or Father’s Day!
