Can you guys believe Christmas is just 5 days away?? I can’t! Better question: Can you believe that I still have shopping to do? Ugh! I’m totally a last minute person… I only have a few little things to get, but regardless… I still have to brave the crazies at the stores to go and get them! Oh well… It’s my own fault. I was able to do most of my shopping online, so I can’t complain too much 🙂
I don’t know about you guys, but I feel like I’ve been eating so much junk lately. Between Christmas cookies, holiday parties, and just being short on time… I definitely haven’t been eating my healthiest. It’s so hard to resist all the treats! I don’t indulge in everything, but if it’s something that I know I probably won’t have until next Christmas, I totally go for it. You only get to have some of these things once a year, so you might as well enjoy it while you can!
While the holidays are the best time to gather with friends + family to celebrate, I think that it can be really hard for those who are trying hard to stick to a specific diet (for whatever their reasons). People fail to remember that some people can’t eat certain things (allergies, intolerances, etc) or they just don’t want to eat them (dietary preferences, tastes, etc). I know I’m a picky eater, so sometimes I just wind up snacking on the veggie plate… which unless you like drenching veggies in ranch dressing, it’s preeeeetty boring. But I’m about to change that.
Enter: Healthy Pumpkin Basil Hummus. AKA your new go to appetizer. I can’t even tell you how easy this was to make. You just take a few super simple ingredients, throw them in your food processor or Nutribullet, give it a quick pulse… and that’s it! When I tested this recipe for the first time, Ty and I practically ate the entire dish of it within minutes. We couldn’t get enough of it. It would be perfect to bring to a holiday party or serve as a snack before your Christmas dinner this year!
Healthy Pumpkin Basil Hummus
Ingredients
- 16 oz can of chickpeas rinsed + drained (I use no salt added)
- ½ c pumpkin puree
- 2 tbsp olive oil
- 1 tsp pepper
- ½ tsp salt
- ¼ c fresh basil leaves
- ½ tsp rosemary
- Back to Nature Organic Stoneground Wheat Crackers (for dipping)
Instructions
- Combine all chickpeas, pumpkin, oil, spices + herbs in a large food processor. If necessary, add a little bit of water to the mixture to make it smooth. Serve with crackers + enjoy!
