They’re kinda the most amazing appetizer/snack ever created. I’m not sure who the person was that said lets take chips (an already salty, delicious snack) and pile them high with all kinds of other delicious things like meat, cheese, veggies, sauces and avocados.. but I just want to thank them for creating one of my favorite foods.
I don’t really eat nachos very often – because, let’s be real.. they aren’t exactly what I would call a health food by any means. They’re typically super greasy, loaded with a TON of cheese, some unhealthy toppings… you know the deal. 100% delicious but lacking on the nutrition level.
There are some things that I think you can’t really make healthier. For example.. mac and cheese. I once tried to make a dairy free, gluten-free mac and cheese and when I tell you it was a disaster, I’m not even joking. A have a small list of things that are meant to live in full un-healthy glory and not to be tampered with. I thought nachos would always be on that list.
Until I realized they didn’t have to be! We are living in what I think is the best possible time to be eating healthy. Tons of paleo products like grain free tortilla chips, Whole30 friendly ranch dressing and loads of gluten free goodies are readily available at our finger tips – especially when you shop at a place like Whole Foods Market!
Whole Foods Market has an enormous variety of paleo friendly, healthier products. From marinades, to snacks, to even chocolate – you can find basically anything there that will make eating healthier that much easier. By using Siete Food’s Grain Free Tortilla Chips, Tessemae’s Ranch + Mike’s Hot Honey that I found at Whole Foods Market – I was able to make the most DELISH Paleo Buffalo Chicken Nachos.. you have to try them!
Paleo Buffalo Chicken Nachos
- 1 bag Siete Grain Free Tortilla Chips
- 2 cups shredded chicken
- 1/4 cup shredded carrots
- 1/4 cup finely chopped celery
- 1 avocado, cut into small squares
Creamy Buffalo Sauce
- 1/4 cup Tessemae's Organic Creamy Ranch Dressing
- 1/4 cup Buffalo Sauce
- 1 tsp Mike's Hot Honey
- Preheat oven to 350
- On a sheet pan - layer chips + shredded chicken. Heat for 5-10 minutes, or until warm.
- While the chicken/chips are cooking - whisk together sauce.
- Remove the sheet from the oven + top immediately with carrots, celery, avocado + buffalo sauce
- Enjoy immediately!
