Can you guys believe Thanksgiving is this week?! I seriously can’t. Where has this year gone?? I feel like we were just sitting outside enjoying the sun, and now here we are bundling up for the snow (or at least I am, it’s SO cold here in CT!) Although I could do without the cold, I always get so excited for this time of year because the holidays are my favorite!
Getting together with friends and family, eating good food… what’s not to love?! Those are two of my favorite things to do! I learned how to cook by spending time in the kitchen with my family. When I cook at home I’m always relaxed and happy, but every year when I get to go home and cook with my mom and family it makes me so happy! I have sooo many good memories learning, laughing, and eating (of course!) there!. Every year I usually get together with friends so catch up over the holidays, but I’ve never hosted an actual Friendsgiving. (I know.. can you believe it!? I feel so behind on the times…) This year that’s going to change! I’m excited to cook and share alll the goods with my friends!
Brunch can usually be sooo heavy and carb/sugar laden. Which – sometimes, is totally great. Who doesn’t love a good stack of waffles with strawberries and ice cream, muffins or pancakes? (You know I do.) Sometimes, you just need some straight up yummy, savory protein packed options too, and that’s exactly what this Paleo Fall Frittata is.

In addition to being a much healthier option than muffins and pancakes, this frittata is SO full of flavor. It’s made with a ton of veggies and Simply Organic spices which make it soooo tasty! I used a blend of their turmeric, garlic powder & coarse black pepper pepper which = the perfect combo to dress up any eggs.Spices are the key to making something that could be considered somewhat boring (plain old eggs) and making them SO delicious! I love Simply Organic’s spices because they are super high quality (all organic, non GMO) and extremely affordable. Often times spices & spice blends can have funky ingredients in them to stabilize them, or the come from an unknown (and often highly processed) source. Since we use spices in pretty much everything we cook, we like to make sure we’re using the best ingredients. I know you’re going to love how we used the spices in the recipe!
Paleo Fall Frittata
Need a healthy addition to your Friendsgiving brunch? Make this Paleo Fall Frittata! Whole 30 friendly and gluten free, it's so delicious!
- 2 tablespoons extra virgin olive oil
- 1/2 cup thinly sliced onions
- 1/2 cup spiralized butternut squash
- 1/2 cup shaved brussels sprouts
- 1/2 cup mushrooms i used shiitake
- 1 tablespoon chopped basil
- 1 tablespoon chopped sage
- 1 teaspoon Simply Organic garlic powder
- 1 teaspoon Simply Organic pepper
- ½ teaspoon Simply Organic turmeric
- Sprinkle of salt
- 4 eggs
- 2 egg whites
- 3 tablespoons almond milk
- Optional if not paleo or whole 30: ¼ cup parmesan cheese
Preheat oven to 350
In a skillet or oven safe pan, saute onions, butternut squash, brussels sprouts, and mushrooms in olive oil,
In a separate bowl, whisk eggs, egg whites + spices together with milk
Add egg mixture to pan
Cook over medium high heat for 5-10 minutes until eggs start to cook
Place in the oven and cook for an additional 5 minutes. Broil on high for 1 minute to get a golden brown color.
