I have a confession.. I have never made chicken wings up until I made these Spicy Pineapple Baked Chicken Wings! Does that make me a bad foodie?! It probably does. I guess I have always been intimidated with wings… they just seem so complex, and easy to mess up. You know what I’m talking about – when you have wings that are just soggy and gross and NOT good. Then there is the whole marinade thing. Do you go spicy? Or sweet? Do you make them super crispy? SO many variables.
But now that I’ve made them… I feel like I’ve been missing out all this time! I will caveat, that I’m not a huge wings fan. Partially because of all the variables I mentioned above. There’s nothing worse than biting into chicken wings that aren’t up to par. Many of my recipe ideas come from things that ‘aren’t up to par’ in my head. I’ll take a bite of pizza, or an appetizer and thing ‘hey, I could make this taste better and better for you!’ And then I come home and make it happen!
That was the case with these wings. I was at a party a couple of weeks ago, and had some wings that were just ‘meh’. Their flavor was boring, they weren’t crispy enough… overall, I was underwhelmed. So naturally a few weeks later when I saw wings at Trader Joes, I grabbed them. I have been experimenting with Corine’s Cuisine in the kitchen and thought they would pretty much be a match made in heaven.
I was right.
Corine’s Cuisine makes gourmet sauces that have super unique flavor combos like Spicy Mint, Coriander Coconut and Ginger, Scallion & Fresh Lime. As someone who obviously loves to cook – these sauces are SO much fun to play around with in the kitchen. I love that they are made with real, simple ingredients that add a ton of flavor to pretty much any dish.
I used the Sauce No 31: Pineapple & Mango Hot Pepper Sauce along with some honey and pineapple juice to create a yummy glaze to go on top of the wings after they had crisped up in the oven – Tyler loved them!
- 2 lb chicken wings
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- 4 teaspoons honey
- ¼ cup pineapple juice
- ¼ cup Corine's Cuisine Pineapple & Mango Hot Pepper Sauce
- Preheat oven to 400
- Toss chicken wings in olive oil, salt and pepper
- Place on a greased cookie sheet
- Bake for 30 minutes, flipping half way
- While chicken wings cook, mix together honey, pineapple juice and Corine's Cuisine sauce to create a marinade
- Take out, toss in marinade until thoroughly coated, put back in the oven and bake for 10 minutes until crispy
