These energy bites are about to be your new favorite snack!! They’re like little chewy, portable, way healthier Lemon Poppy Seed Muffins! I’m pretty sure I’ve said it on here before, but Tyler is in love with all things Lemon and Lime. Key Lime Pie is his favorite dessert, and he’s always asking me to make him Healthy LemonPoppy Seed Muffins to have for breakfast. I conquered the muffin request a while back with these Healthy Lemon Chia Seed Muffins. They don’t have poppy seeds in them, but you could easily swap them in. I just like that chia seeds have a little bit more nutritional benefit. His latest request? Lemon Poppy Seed Scones.

A few weeks ago, Tyler was asking me to make him Lemon Poppy Seed Scones. I had just placed an order on LuckyVitamin and purposely included a bag of poppy seeds in it so I could make them…but then I decided to do a Whole30. I don’t know about you guys – but I simply do not have the will power to be able to make scones while refraining from eating gluten, grains, and sugar. That seems like torture and I knew I wouldn’t make it. So I compromised and made these Whole 30 Lemon Poppy Seed Energy Bites!
Now, if you’re doing Whole 30 – wait just a second before you get your hopes up. I have to level set your expectations here. These do not taste like scones.. It would be hard to replicate the buttery, flaky deliciousness of a scone in an energy bite, and I’m not about to lie and tell you these do.
Buuuut they’re pretty tasty, and would be a much healthier alternative to a scone for a quick breakfast or snack! They’re sweetened with dates, packed with healthy fats from the nuts, and have the perfect amount of lemon zest/juice to give them a little zip!
Ingredients for Lemon Poppyseed Bites
To make this recipe you’ll need:
- food processor
- pecans
- hemp seeds
- dates
- citrus zester
- collagen peptides
- poppy seeds

Whole 30 Lemon Poppy Seed Energy Bites
Ingredients
- 3/4 cup pecans
- 2 tablespoons hemp seeds
- 1/4 cup dates
- 1 tablespoon lemon juice
- 1 tablespoon of lemon zest
- 1 tablespoon collagen peptides
- 1 tablespoon poppy seeds
Instructions
- In a food processor or NutriBullet, blend all ingredients except poppy seeds. Once batter is completely blended, stir in poppyseeds.
- Roll in to 1 tbsp bites + store in the fridge until ready to eat.
