2cupszucchinisliced 1 inch thick (about 2 zucchini)
Marinade:
3tablespoonsolive oil
2tablespoonslemon juicejuice of one lemon
½tablespoonlemon zestzest of one lemon
1tablespoonminced garlicabout 3 cloves
1/2teaspoondried basil
1/2teaspoondried oregano
½teaspoondried thyme
¼teaspoonsalt
¼teaspoonblack pepper
1/8teaspoonred pepper flakesoptional
Instructions
Pound chicken with a meat mallet to tenderize (optional but recommended) Cut chicken into cubes.
Chop your vegetables.
In a large bowl, mix together your marinade. Add cubed chicken and vegetables. Stir together until evenly coated and marinate for at least 20 minutes.
Once the chicken/veggies have marinated - preheat grill to medium-high heat.
Assemble skewers. Grill on medium high heat for 5 minutes, flip and grill for another 5-10 minutes until chicken is browned and cooked to 165 internal temp.
