Place cleaned artichokes in crockpot (see below for instructions on how to clean artichokes)
Pour broth in the bottom of the crockpot.
In a measuring cup (will be easier to pour from!), whisk together olive oil, garlic, cheese + spices until combined. Pour olive oil/spice mixture evenly in each artichoke.
Cook on low for 3-4 hours. It is best if you can baste the artichokes with the broth every hour or so. Cook time may vary depending on the size of your artichokes. If they’re on the smaller side, I would do 3, if larger, try 4!
Garnish with fresh parsley, serve + enjoy
Notes
Tips for Cleaning Artichokes:
Slice stems on the bottom so they can sit flatly in the crockpot
Use a scissors to trim pointy leaves (not necessary, but recommended!)
Slice top of artichoke so it is flat. This will make it easier to fill with the oil and spices
Bang the artichoke on a sturdy surface to help open up the leaves. Use your fingers to open up the artichokes + be sure to rinse very well in the sink. (sometimes they can have dirt or even small bugs in them - YUCK!)
Dip in lemon juice immediately after washing to avoid browning (not necessary, but if you want them to look pretty!)
