Healthy Sloppy Joes are easy to make in only 30 minutes! Packed with protein from turkey, loaded with veggies and made with no brown sugar! These are great for a quick weeknight dinner!
In a large skillet, heat olive oil over medium heat. Once hot, add the onion, carrots, celery, and bell pepper. Cook for 7-8 minutes, or until vegetables are tender, stirring as needed. Add the minced garlic and cook for another minute.
Move the vegetables to the sides of the skillet and add ground turkey to the center. As it cooks, break up the turkey with the spatula and slowly start mixing the veggies in. Cook until the turkey is fully browned and broken up.
Add salt, chili powder, oregano, onion powder, and black pepper. Stir until combined.
Add the tomato sauce, ketchup, broth, coconut sugar, Worcestershire sauce, and vinegar to the pan. Stir to combine.
Simmer uncovered over medium heat for 10-15 minutes or until the sauce has thickened to desired consistency, stirring periodically. If the meat mixture becomes too thick and you want it to be more saucy, you can add a little more broth.
Taste and adjust sweetener and seasonings if needed. Once finished, add meat to buns, top with cheese if desired, and enjoy!
