Ingredients
14ozchopped artichoke heartsdrained WELL, about 1.5 cups
5ozthawed, drained frozen spinachdrained WELL, about 2.5 cups
1cupnon fat greek yogurt
½cupsmall curd cottage cheesei used 4% milkfat
1cupshredded mozzarella cheesedivided
1cupshredded cheddar cheesedivided
¼cupgrated parmesan cheese
½teaspoonblack pepper
½teaspoongarlic powder
½teaspoononion powder
Instructions
Preheat the oven to 400 degrees F.
Important: Thaw and drain the spinach very well. I recommend using a fine mesh strainer and paper towels. Make sure to squeeze the water out of the spinach to prevent your dip from being watery!
In a bowl add the artichoke hearts, spinach, yogurt, cottage cheese , 1/2 cup mozzarella, 1/2 cup cheddar cheese, parmesan cheese and spices. Mix together well.
Pour dip mixture into a glass 8x8 or medium oval pan. Top with remaining 1/2 cup of cheddar and 1/2 cup mozzarella cheese. Bake at 400 for 25 minutes.
Broil for 1-2 minutes before serving to get the cheese on top brown and melty!
Serve with chips or veggies or choice.
