  • 2 cups avocado diced
  • 1.5 cups tomato diced - 1 pint
  • 1.5 cups corn kernels fresh or frozen
  • 1/4 cup red onion finely chopped
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt optional
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons lime juice juice of one lime
  • 2 tablespoons fresh cilantro OR basil minced (optional)


  • Dice avocado and tomatoes.
  • In a large bowl, mix all ingredients together until combined.
  • Serve & enjoy.
