Healthy Lemon Parmesan Roasted Asparagus

This Healthy Lemon Parmesan Roasted Asparagus recipe is a quick and easy vegetable side dish. Crisp asparagus is tossed with lemon zest, parmesan cheese + olive oil to make the most delicious, low carb and gluten free side dish. Great for serving with chicken or fish.

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper or silpat baking sheet.
  • Line cleaned, trimmed asparagus on baking sheet. Whisk lemon juice, zest, olive oil, salt, pepper together.
  • Brush asparagus with lemon mixture + sprinkle parmesan on top of asparagus.
  • Bake at 400 for 12 minutes until asparagus is tender.
