Heat a large sauté pan. Add bacon pieces to the hot pan and sauté for 2-3 minutes on each side until golden brown.
While bacon cooks, scramble eggs in a bowl on the side
Once bacon is finished cooking, remove ¾ of the bacon grease from the pan. Discard or save for another day. Leave just enough bacon grease in the pan to sauté the onions/eggs (about a tablespoon)
Add onions to the bacon grease and sauté for 3-5 minutes until slightly translucent.
Add scrambled eggs to the pan and cook for 3-5 minutes.
Once eggs are cooked, stir in black beans so they warm from the residual heat.
Crumble the bacon and assemble your burritos. Tip for rolling burritos: once you've added your filling and toppings, fold the tortilla in half. Gently pull the top half of the tortilla, packing the filling in tightly (see above for photo). Tuck the sides in and then roll.
Optional: We like to drizzle a little hot sauce on the burrito while eating
