Places steaks on a plate. Pat steaks dry with paper towel.
Season steaks on each side with salt and pepper.
In your skillet, heat ghee. You can test the heat by sprinkling a few drops of water in the pan. When the water sizzles, the oil is hot.
Once pan is hot (it must be hot!!) add in steaks to the pan. Lay garlic cloves and rosemary along side/in between the steaks.
Sear the steak on each side for about 4 minutes, flip + sear for additional 4 minutes for medium (sear for 5 minutes on each side for well done).
Try to baste the steak with the ghee as it cooks by tipping the pan and using a spoon to scoop the juices + spoon over the steak.
Remove steaks from skillet and place on a plate. Cover + allow to rest for 3 minutes before serving.
Notes
Tips for cooking steaks in cast iron:
Have your steaks at room temperature - If your steaks are cold, it will take them longer to cook and you run the risk of not cooking the steaks through the center
Make sure to heat your skillet- DON'T put your steak in oil that isn't hot. You will not get a good sear on it!
Allow steaks to rest- Once your steaks have cooked, allow them to rest for a few minutes before slicing + eating. This ensures they cook fully throughout!
