LASAGNA SOUP

– – 1 tablespoon olive oil – 1 lb ground beef – 1/2 cup onion minced – 2 tablespoons garlic – 28 oz crushed tomatoes – 1 bay leaf – 1 teaspoon dried basil – 1 teaspoon dried parsley – 1 teaspoon dried oregano – 1/2 teaspoon black pepper – 1/4 teaspoon red pepper flakes – 4 cups beef stock – 2 cups water – 2 cups reginetti pasta – ¼ cup ricotta cheese – ¼ cup parmesan cheese
LASAGNA SOUP
In a large pot, heat olive oil. Cook the ground beef for 10 minutes until browned. Add onion and garlic. Sauté for 5-7 minutes until onions/garlic are translucent.

Add tomato sauce, spices, stock and water to the pot, bring to a boil. Once boiling, reduce heat and simmer for 15 minutes.Add pasta and cook until al dente.
