Preheat the oven to 450 degrees F. While the oven is preheating, cut potatoes into french fry shapes, approximately ½ inch thick. Prepare a parchment lined baking sheet
Add cut potatoes, olive oil, salt and pepper to a large mixing bowl. Toss with a spatula to cover all of the potatoes evenly with oil and seasonings.
Place fries on a parchment lined baking sheet in an even layer. You may need to use 2 baking sheets. Try not to stack the fries on top of one another as you want air to circulate in between them.
Bake at 450 degrees F for 25 minutes, then flip and bake for an additional 15 minutes until all fries are golden brown.
Depending on your oven you may need a few extra minutes. You can also set the oven to broil for a minute to make them crispy.
Notes
You can use russet potatoes, Idaho potatoes, or Yukon gold potatoes. Sweet potatoes work well also but they don't tend to get as crispy when baked in the oven.We don't soak these in water beforehand and they come out just as crispy but you can certainly soak them before as this will help remove some of the starch.For some added flavor, you can sprinkle on a bit of garlic powder, paprika, or even parmesan cheese!
