Balsamic Mushrooms are the perfect easy side dish. Marinated mushrooms get grilled or roasted in the oven for a flavor filled, healthy vegetable side dish!
Add mushrooms to marinade and allow them to marinate for at least 20 minutes.
When ready to cook, heat grill on high.
Wrap mushrooms in foil packets - see images above for foil packet tips. Cook on medium high heat for 20 minutes, flipping halfway through at the 10 minutes.

Bake at 400 degrees for 20 minutes on a parchment lined baking sheet.
StoveTop Instructions
Whisk together marinade.
Pour marinade into a ziploc bag or container.
Cut mushrooms into smaller pieces (1/2 or 1/4) and add to marinade. Allow them to marinate for at least 20 minutes.
Cook over medium high heat for 15-20 minutes until mushrooms are soft. Use a larger pan so the mushrooms have space to cook and cook uncovered so liquid can evaporate.
Notes
Substitutions:
Oil: You can use avocado oil, melted butter, or canola/vegetable oil instead of olive oil.
Vinegar: We used regular balsamic vinegar for this recipe but you can also do balsamic glaze, or flavor infused balsamic vinegar. I have not tried this with red white vinegar or apple cider vinegar. I wouldn't recommend it.
Mushrooms: Baby bella, portabello, white button, or really any other type of mushroom with work in this recipe.
Herbs: You can substitute fresh parsley/basil for dried. Use 1 tablespoon of fresh basil or parsley instead of the dried.
Spices: You could add red pepper flakes to make these spicier. Fresh rosemary would also be a delicious addition!
Grilled Mushrooms with Cheese: I'm sure these would be delicious sprinkled with feta or goat cheese once they come out of the oven!
