Balsamic Mushrooms are the perfect easy side dish. Marinated mushrooms get grilled or roasted in the oven for a flavor filled, healthy vegetable side dish!

There are few things we love more than marinated mushrooms that get cooked on the grill. They’re the best. They’re delicious baked in the oven too, but there’s something about the grill that just gives them such a good flavor.

These balsamic mushrooms are made with only 8 ingredients and they’re SO easy. This is my go to grilling side dish, and perfect with any meal. We like to serve them with this Pulled Pork and Veggie Kebabs (the more grilled veggies, the better – IMO!)

This grilled mushroom recipe is one you’re going to want to make ALL summer long, I swear! You can even make them in the oven, or on skewers. Roasted Balsamic Mushrooms are seriously delicious and SO easy.

You’re going to love them. Let’s make them!

Ingredients for Balsamic Mushrooms

To make these mushrooms you’ll need:

  • olive oil
  • balsamic vinegar
  • fresh minced garlic
  • dried basil, dried parsley
  • salt and pepper
  • mushrooms: You can use any type of mushroom, but we like baby bella.

How to make Balsamic Mushrooms:

To make balsamic mushrooms,

  1. Whisk together your marinade. Pour it over your mushrooms and toss until they are evenly coated.

  1. Let the mushrooms marinate for at least 20 minutes (up to 24 hours)

  1. When ready to cook, prepare a foil packet, skewers or bake them in the oven, we’ve included instructions for all the different cooking methods below.

How to make Grilled Mushrooms in Foil

  1. To make foil packet balsamic mushrooms, lay a piece of foil (about 1.5 feet long) on a flat surface. Pour your mushrooms into the foil packet.

  1. Curl the long edges of the foil packet up to keep your marinade/mushrooms in. Fold the other side in to create a packet.

  1. Place another piece of foil over the fold going the opposite way. This helps to ensure that your foil packet won’t break open when flipping on the grill.

Mushroom Skewers: You can also make these mushrooms on skewers. Follow the same cooking time. These are our favorite skewers for grilling. These Mushroom Kebabs are also delicious!

How to Grill Mushrooms in the Oven:

You can make these mushrooms in the oven too. I recommend baking them at 400 degrees for 20 minutes on a parchment lined baking sheet.

You can also put the foil packet in the oven and bake it at the same time/temp!

Grilled Mushrooms in Foil

Cooking mushrooms in a pan: You can cook these mushrooms in a pan if you’d like. I’d recommend cutting them into smaller pieces so they cook nicely. Cook over medium high heat for 15-20 minutes until mushrooms are soft. Use a larger pan so the mushrooms have space to cook and cook uncovered so liquid can evaporate.

How long should you marinate mushrooms before grilling?

20 minutes is the least amount of time you should marinate your mushrooms before grilling.

We like to marinate ours for up to 24 hours for maximum flavor. Anything past 24 hours might leave you with mushy mushrooms!

Substitutions for this balsamic mushroom recipe:

Oil: You can use avocado oil, melted butter, or canola/vegetable oil instead of olive oil. 

Vinegar: We used regular balsamic vinegar for this recipe but you can also do balsamic glaze, or flavor infused balsamic vinegar. I have not tried this with red white vinegar or apple cider vinegar. I wouldn’t recommend it.

Mushrooms: Baby bella, portabello, white button, or really any other type of mushroom with work in this recipe.

Herbs: You can substitute fresh parsley/basil for dried. Use 1 tablespoon of fresh basil or parsley instead of the dried.

Spices: You could add red pepper flakes to make these spicier. Fresh rosemary would also be a delicious addition!

Grilled Mushrooms with Cheese: I’m sure these would be delicious sprinkled with feta or goat cheese once they come out of the oven!

Other marinades you can use on mushrooms:

There is really no wrong marinade for mushrooms! This Healthy Lemon Basil Vinaigrette makes a delicious marinade, or you can even cheat and use a store bought dressing (look for one with cleaner ingredients and no added sugars). 

Another one of my favorite marinades to use on veggies is the marinade from this Healthy Maple Mustard Chicken recipe! 

Any of these Healthy Salmon Marinades or Healthy Chicken Marinades will also work – just double the recipes!

Storing Grilled Mushrooms:

Storing: You can store these balsamic mushrooms in your refrigerator for up to 4 days. Reheat them in the microwave, toaster oven, or in a hot pan. 

Freezing: We do not recommend freezing these cooked mushrooms

Serving: We prefer to eat these veggies warm off the grill, but you can also serve them cold.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 lb mushrooms
  • 1 teaspoon garlic minced (or ¼ teaspoon garlic powder)
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Grilled Mushrooms

  1. Whisk together marinade.
  2. Pour marinade into a ziploc bag or container.
  3. Add mushrooms to marinade and allow them to marinate for at least 20 minutes.
  4. When ready to cook, heat grill on high.
  5. Wrap mushrooms in foil packets – see images above for foil packet tips. Cook on medium high heat for 20 minutes, flipping halfway through at the 10 minutes.
  6. You can also make these mushrooms on skewers. Follow the same cooking time. These are our favorite skewers for grilling.

Oven Instructions

  1. Whisk together marinade.
  2. Pour marinade into a ziploc bag or container.
  3. Add mushrooms to marinade and allow them to marinate for at least 20 minutes.
  4. Bake at 400 degrees for 20 minutes on a parchment lined baking sheet.

    These will be made again. With snow and ice outside, we baked them. So good! And so easy! Served with burgers, roasted potatoes, and your green beans almandine (sans almonds due to an allergy). I’d even make these for company. Thank you for another great recipe!
