In order to cook the chicken, follow these instructions for instant pot shredded chicken. You can also use grilled or shredded chicken from leftovers, or a rotisserie chicken.
In two bowls split ingredients evenly, adding in chicken, brussels sprouts, avocado, pomegranate and quinoa/kale mixture
Once bowls are assembled - whisk ingredients for tahini sauce off to the side.
Toss bowls with tahini sauce or drizzle on top.
Note: You can enjoy the brussels sprouts in this raw or cook them slightly. If you are cooking them - saute in olive oil for 1-2 minutes before assembling the bowls
