Instructions
In a large pot, heat olive oil.
Saute minced garlic and onion over low heat until fragrant and slightly softened, about 5 minutes.
While garlic and onion cook, chop tomatoes.
Once garlic and onion have softened, add tomatoes to the pot along with basil, parsley, salt, pepper and oregano.
Stir to combine and cook over low heat for 30 minutes.
