red baby potatoes
cut into quarters or small cubes (baby potatoes or fingerling are best)

olive oil

black pepper

dried parsley

grated parmesan cheese

minced garlic
about 6 cloves
Instructions
Preheat your oven to 400 degrees and prepare a parchment lined baking sheet.
In a bowl, toss cut potatoes, olive oil, spices, cheese and garlic until the potatoes are evenly coated.
Spread coated potatoes evenly on a parchment lined baking sheet.
Bake at 400 degrees for 20 minutes, then flip using a spatula and bake for another 20 minutes until golden brown and crispy.
