Garlic Roasted Potatoes are an easy side dish that goes with practically any meal. Made with only a few ingredients, these roasted red potatoes are perfectly crispy, cheesy, and delicious!
They take under 10 minutes of prep time and the oven does most of the work roasting them to crispy perfection. Unlike other roasted potato recipes that have tons of oil, this recipe is low in fat while being full of flavor!

For these garlic potatoes you’ll need:
- red baby potatoes – these are great for roasting because they get a crispy outside while maintaining a soft center
- olive oil – this is our favorite oil for roasting potatoes but avocado oil also works
- dried parsley, salt, pepper
- parmesan cheese – we like to use freshly grated parmesan – it melts better!

Red Potatoes: The best substitutes are thin skinned potatoes. You can make this recipe with fingerling, russet, or yellow potatoes – but we like red potatoes best! Yukon gold potatoes will also work but often don’t get as crispy!
Olive Oil: You can substitute avocado oil, melted butter, or ghee.
Parmesan Cheese: We don’t recommend substituting the parmesan in this recipe. Other cheeses have more moisture in them and will not result in crispy potatoes. If you don’t like it, you can omit it.

- In a bowl, toss all ingredients until evenly coated.
- Spread coated potatoes evenly on a parchment lined baking sheet.
- Bake at 400° for 20 minutes, then flip using a spatula and bake for another 20 minutes until golden brown and crispy.

Make sure your potatoes are evenly coated in olive oil. This ensures that they get crispy when roasted!
Don’t overcrowd the pan – You’ll want your potatoes to be spread out evenly so enough air can circulate while they’re roasting. This will help them get crispy!
Use good quality parmesan cheese– You can grate the parmesan fresh, or use a good quality pre-grated parmesan. Nothing from a green container that is shelf stable 🙂

Storing: Potatoes will last in the refrigerator for up to 4 days in an airtight container.
Freezing: We don’t recommend freezing roasted potatoes, they lose their crispiness!
Reheating: We recommend reheating these potatoes in the oven or toaster oven to get them crispy again. You can reheat this recipe in the microwave but they will not be crispy.

Ingredients
- 1.5 lbs red baby potatoes cut into quarters or small cubes (baby potatoes or fingerling are best)
- 1 tablespoon olive oil
- ¼ teaspoon pepper
- ¼ teaspoon salt
- ½ teaspoon dried parsley
- 3 tablespoons grated parmesan cheese
- 2 tablespoons minced garlic about 6 cloves

- Preheat your oven to 400 degrees and prepare a parchment lined baking sheet.
